Turkey Stuffed Peppers

These turkey stuffed peppers are an easy way get some veggies in, as you eat the pepper along with all the yummy filling! As a bonus, these can be made a few days ahead of time and bake when needed. Just heat them up for 20-25 minutes, add a salad add dinner is served!
Ingredients
1 lb ground turkey
1 small onion, diced
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian Seasoning
3 cups fresh spinach
3 bell peppers 
1 1/2 cups cooked brown rice
28oz crushed tomatoes (you can also use marinara or another red sauce)
1/4 cup parmesan cheese

1. Brown your meat and onion, and season with 1/2 tsp salt, 1/2 tsp pepper and 1tsp Italian Seasoning.
2. While meat is cooking you can prep your peppers. I cut mine in half lengthwise, carefully remove the stem and scoop out the seeds. Lay 6 halves in a 13*9 baking dish.
3. Add the spinach and mix until it has softened.
4. Add 1 1/2 cups of cooked rice and 28oz of crushed tomatoes and mix to combine.
5. Scoop the mixture into your peppers and sprinkle with fresh parmesan cheese. You could also use mozzarella.
6. Put some water in the dish (about 1/8"). Cover with foil and bake at 350 for 20 minutes, remove the foil and bake another 5 minutes.
