Chicken Fajita Soup

This soup is so simple and comes together in no time! Perfect for a busy weeknight
Ingredients
One medium onion (chopped)
2-3 bell peppers (cut into thin strips)
2 TBSP EVOO
2 cloves crushed garlic
1 jar of your favorite salsa (I use Wegmans organic salsa)
4 cups of chicken broths
1 rotisserie chicken (shredded)
**Optional
1 can rinsed black beans
1 cup of corn

Heat the olive oil in a large pot over medium heat. 
Add the onions add peppers and cook until softened. Add the garlic and cook one minute more.
Pour in the salsa and broth. Cover and simmer for  minutes.
Add the chicken and season with salt & pepper.
That's it!
You can also add the beans and/or corn when you add the broth. You can make this as hearty as you want.
We serve it with some fresh Greek yogurt, scallions, a sprinkle of cheese & a homemade quesadilla.
