Chicken Cordon Bleu Rollups

I loved to eat Chicken Cordon Bleu growing up. It was usually breaded, stuffed with a cheese sauce and maybe not the healthiest option. So I decided to lighten it up a bit with a grilled rollup style with the same flavors
Ingredients
1lb boneless, skinless chicken breast
6 -8 slices of thinly sliced swiss cheese
6-8 slices of thinly sliced ham off the bone
Handful of fresh spinach
Herbed EVOO (or plain)
kitchen twine cut into 12" pieces
Slice the chicken breast lengthwise and pound until about 1/4" thick.
On each piece, lay a few pieces of spinach, a slice of swiss and a slice of ham.
Beginning at one end, roll tightly and secure with kitchen twine.
Drizzle with the herbed olive oil and sprinkle with salt & pepper.
Grill over medium heat for 10-15 minutes, turning often.
These will be a new Summer go to meal... and you can get creative on other ways to stuff them too!
