Five Meals for Your Family Table....Week 36

Happy Monday friends! I'm not sure about you, but this is how I felt while out shopping this weekend...
Those poor last 3 weeks of Summer just get lost after Labor Day. 
But I do love all things fall....so this weeks meals are a bit less grilling and a little more cozy.

Butternut Squash Ravioli is a simple dinner to pull together and is a fall staple in our house. The squash and spinach are full of nutrients and make a yummy topping for some basic ravioli. You can grab the recipe here

Keeping with some Taco Tuesday-like tastes, but switching it up with some enchiladas. I make mine with ground turkey, but you can easily change it up with ground chicken or beef. And they are filled with black beans and spinach for some extra goodness. Head here for the recipe.

These  BBQ Chicken Mini Meatloaves are a new favorite in our house. A few simple ingredients and they bake in less than 30 minutes! Add some rice or a potato and of course something green!

This recipe, takes your basic chicken up a notch. I use our favorite chicken recipe, the almond crusted chicken, that you can find here. While the chicken is in the oven, I saute some sliced mushrooms with a little EVOO and season with salt & pepper. Once the mushrooms are softened, I add a few tablespoons of chicken broth and some capers. It makes a great sauce for the chicken and changes up the taste of an everyday meal. This is a great dish served over rice too! Kid tip.. kiddos don't like mushrooms? Just don't top their chicken with it! You are not cooking a separate meal, just making a few changes :)

Breakfast for Dinner!  Let's face it... sometimes the end of the week is crazy.....and well sometimes the beginning is too! This is the best end of the week meal idea for our first full week of school and activities. The kids just think it's the funniest thing to eat pancakes for dinner! So make it an easy night in the kitchen and have breakfast for dinner!
