Simple Turkey Enchiladas

With some help from your favorite enchilada sauce, these turkey enchiladas are super simple to make. You can even make them the night before and just pop them in the oven at dinnertime. 

Ingredients
1 lb ground turkey
1 medium onion (chopped)
1 can black beans (rinsed & drained)
1 cup frozen corn
2 TBSP taco seasoning
Salt & Pepper
1/4 cup of water
8 tortillas
a few handfuls of fresh baby spinach
Shredded cheese (I used Monterey Jack)
1 package of your favorite enchilada sauce ( I use Frontera)

Heat the turkey and onion in a large pan over medium heat. Cook until the meat has browned and the onion has softened. Season with salt & pepper.
Add the beans and corn.
Sprinkle in the taco seasoning, add the water and mix to combine. Heat for 2-3 minutes.
Prepare a glass baking dish with a few spoonfuls of the enchilada sauce and spread a thin layer across the bottom of the dish. 
Lay out a tortilla and place a handful of spinach down the center 
Add about 1/4 cup of the turkey turkey mixture and sprinkle with 1-2 TBSP of cheese. 
Roll it tightly and place seam side down in the prepared dish. Repeat for the remaining tortillas. Top with the rest of the enchilada sauce and a few TBSP of cheese.  
Bake uncovered at 350 for 20 minutes.
Top with a little green onion and a dollop of plain Greek yogurt.
