Something New for Your Family Table Mexican Beef Skillet

 Happy Monday, friends! This has been a wild start to December! I work in the retail space, and these few weeks are a lot! I I did sneak one night at home and enjoyed my twinkle lights.


And I’ve been doing my best to look festive! I love these holiday color flannels and a cute puffer vest! 
Add in a holiday earring and boom I’m looking festive! 


Busy nights mean quick and easy dinners. This Mexican beef skillet is an easy one pan  dinner that we made last week and everyone loved it.


I followed  the recipe as written. First up was sautéing some peppers, onions and garlic.


Then adding in the ground beef and cooking it for 5 to 7 minutes until it was browned. You could easily sub in ground chicken or ground turkey here as well. This is one of my favorite pans when making a one pan dish. And if you don’t have this meat chopper, you really are missing out. 


Next up were the sauce components. Some tomato sauce, taco seasoning, green chilies, and black beans.


Add in some beef broth, some quick cooking rice and put a lid on it and let it finish cooking for 20 minutes.



A little sprinkle of cheese on top and let it sit for a few minutes until it’s melted.
