What's Up Wednesday...October Edition

Happy Halloween friends!!!
We are here hoping this rain stops before all the ghosts and goblins start out Trick or Treating!!!  We celebrated a Halloween Ever dinner last night with my parents and sister, so we can get an early jump on Trick or Treating, since it's a school night. I have said this before, I am a strong supporter of Halloween being moved to the last Saturday in October every year. I think that would work out much better😉

Something New for Your Family Table.....Pumpkin Chili

Hey friends! Gosh I am tired this morning after staying up to watch Boston win the World Series! What a fun group of guys to watch play and even more exciting that we got to see them in action this year!
Give me some extra coffee this morning! Lucky for Luke, the kids are off from school today....he was up way past his bedtime too😉

Hey friends! Gosh this week just flew by... and I cannot believe we are less than a month until Thanksgiving! But first let's finish up October enjoying all things pumpkin 😉

Favorite Fall Recipes

Hey friends! So it is officially Fall (ok maybe Winter like) weather here. That means my weekly meal plans are full of some of my Fall favorite recipes. I rounded up a few of our family favorites to share today, in case you are in need of a little dinner inspiration this week.😉

This Butternut Squash Ravioli is a great option for a weeknight. You can have it pulled together in under 30 minutes and it's not a lot of  "hands-on" time. I get the squash pre-cut at our grocery store. It's not the easiest to peel or cut, so I usually opt for the pre-cut.

Colder weather means soup season and this one is a staple. My Black Bean Soup has been a favorite for years. It's filling on it's own or sometimes we add some simple quesadillas on the side... my kids love to dip them in the soup.

This soup recipe was the most popular recipe on the blog two years ago. This Turkey, Bean & Spinach Soup has lots of good for you ingredients and is kid approved. I usually make a double batch of meatballs and freeze them, to use another night.

Try mixing up your Taco Tuesday with these Verde Chicken Enchiladas. With help from a store bought rotisserie chicken, you can have these together in no time!

Can we all agree that a Crockpot meal makes life a lot easier? This Cranberry Chicken is full of flavor, perfect over rice or cauli-rice and cooks all day. The tartness of the cranberry is just a fun pop of flavor! I use fresh orange zest too and serve orange slices on the side for my kids.

And lastly a little something sweet.....
I can't' share Fall food without my Pumpkin Cupcakes. All the tastes of Fall in this delicious bite. 
And the frosting is A-Mazing!!

Halloween Food Fun!!!!

Happy Monday friends!! So I usually share a recipe on Mondays, but with Halloween next week and probably lots of Halloween fun happening this weekend, I thought I would share some fun Halloween inspired food.
It's no secret that I love a good theme. I think it is so fun to plan your food around some kind of theme. So for Halloween I go all out.
Breakfast
Who wouldn't love some "Candy Corn Waffles".  Not with actual candy corn....they just look like it! I use a box pancake mix. I love this one pictured below. I know all of the ingredients and they are loaded with protein which is a great way to start off the day.

Friday Favorites.....Wedding & Target Edition!

Hey, hey Friday!!!! So I am not sure what happened this week, but all of a sudden I am in full on holiday mode. Maybe it's the colder weather or seeing more holiday stuff in stores, but let me tell you, I am ready!!! Now I am not saying rush through anything...but I just love all the fun stuff to do, delicious eats and pretty decorations that come with October, November and December. Like I just really love it all!!!

We had such an amazing time at our family wedding last weekend. The kids did an amazing job & looked spectacular! You can check out all the pics on my wedding post and see a fun video of Luke dancing, that is sure to make you smile!
The setting was just beautiful and we had a great little weekend away.
So truth be told, as much fun as we had at that wedding...it took a lot out of us! It was a busy weekend, with some later nights and we all kind of struggled through the week! We are ready for the weekend and slightly happy with our yucky forecast...perfect for cozy blankets, a good book and some football!

I found myself wandering around Target this week and saw some super cute new things for Fall. I have not been in that section of the store for a bit, so I had some fun trying on a few pieces and thought I would share my favorites with you! Please note, I am not a fashion blogger, nor have I perfected a mirror selfie😉
I am always looking for a cute transitional jacket. I hate having a bulky coat on most times, so I always resort to my olive military jacket that I love. I saw this anorak and oh my gosh it was so cute on! It comes in four colors, but this slate grey color had my heart.

 It's longer in length, which is great for leggings and cooler weather.

My name is Gen and I love anything striped, especially black and white. This striped pullover is cute and cozy. I would say a Fall essential in my book!

Second to stripes is probably any sort of grey cardigan. Not sure what it is, but I love a good grey cardigan and probably have more than I need. But this one, this one has pockets friends! SOLD! And if you are not quite as into grey cardigans as I am, it also comes in black and light pink....also with pockets.😉 Side note, I should have grabbed something better to wear underneath instead of my cami...oh well!

This sweatshirt says "Hey Saturday morning!". Cozy, comfy and again...pockets! It's also a tunic length, so great with leggings!

I did not see this one in my store, but rather came across it online. I love the style and well, olive is my new favorite neutral!

This is just a great basic to throw on to run errands. Comes in 5 colors and you could dress it up too. And if it's warmer out, there is cute option to roll up the sleeves too!

I saw this one hanging on the rack and was like...hmm...should I try it on? So glad I did. It's so cute one. It's a sweatshirt in front, with blue & white oxford striped sleeves. The details are so fun...the back is longer, also oxford and buttons all the way down. A cute, casual top that's just a little more😉

Also, Target has a BOGO 50% off on booties through Saturday, so I feel compelled to reshare with you some of my favorite styles. Target's shoe game is pretty amazing for Fall. They have so many cute styles of booties in the $30 range!
I love, love, love this pair. I tried them on in store and they are adorable. With white denim, distressed denim or a dress.... cute, cute, cute!

I love the detail on this braided bootie and they also come in a great light taupe color. I just think the detail makes them a little more fun!

These are simple and you probably need them in this cognac color and the black! So basic to wear all Fall long and they would be adorable with a dress now.

If you are looking for a higher heel, this option is perfect. The hardest part will be deciding what color to get.. taupe, black or the super cute olive?!?! Friends, the olive color is really great!

This peep toe style is a dupe for a much more expensive designer style. I am always unsure how I feel about the peep toe, but at this price it's worth giving them a shot!

Something New for Your Family Table....Butternut Squash and Black Bean Enchiladas

Oh today is feeling like a Monday friends!!! We had a full three days away at a family wedding and I am in need of a really big mug for my coffee today! It was the most beautiful setting for a wedding and I can't wait to share some pics with you guys!
But good news is that I have a delicious Fall recipe to share with you that is a perfect way to mix up your Taco Tuesday.
In our quest to eat more plant based meals this year, I came across this recipe for Butternut Squash and Black Bean Enchiladas.

Friday Favorites

Happy Friday friends!!! We have had a little bit of all the seasons here this week! We started with 80 and sunny the first few days, 60 and rainy yesterday and dipping into the 40's for the weekend! Crazy!

So last weekend we went to an Oktoberfest in our town. It was our first time and we had the best time! I mean the food, the music... so much fun!

I got this in cream last year and it was my favorite sweater. It's the best length with leggings and I am so excited it is back this season! They have it in 7 colors and I think this olive and the pale pink may need to come home with me! Trust me, this will be one of your favorites too!

 It's a great vegetarian dish, filling and makes a great lunch the next day!

A Little Life Lately

Hey friends!!! We have been loving the start of October, but totally confused as to what to wear with the weather. I think Luke's look sums it up.... no shirt, long pants, and a Winter hat.
I mean Tuesday it was 81 and Saturday is a high of 49??? CRAZY!

I have to tell you this may be my most favorite topic ever. I LOVE to meal prep, grocery shop, cook...ALL OF IT. Now I know I may be alone in this, but something about chopping vegetables totally relaxes me. Crazy, right?
And I love when my fridge is stocked and organized and ready for the week. I attribute that to my days working at Target, making sure the aisles were neat and full and ready to shop😉

A Day in the Life, Fall 2018

So I love "Day in the Life" posts. Although some people may find them boring, I love getting a peek into someone's everyday life. I have done these posts a few times, and was in the mood to do another one! If you missed the others you can check them out here....
I planned to blog about my September 26th. I did pretty well taking pics throughout the day, but fell off a little at night. 
Our alarm goes off at 5:25 am everyday. I am usually a snoozer, aka I hit the snooze button once or twice, but on this day I actually got up with my alarm. Also I should really have a more exciting screen saver. I will work on that😉

I do love all the October things. I feel like September I am still wishing it was Summer, but by October I have accepted Summer is over and am ready for all the Fall things! Is plaid a color? Because that's my Fall favorite!

I actually like both. But my kids....apple cider slushies from our favorite Cider Mill!

Yes, but I have to eat it at home and cut it into slices. I commend those that can walk around a Fall festival eating them off a stick. I am not that skilled.

Pumpkin Doughnut or Apple Cider Doughnut?
Pumpkin all the way. Preferably warm, while wearing something plaid at a pumpkin patch.

Long or Short Cardigan?
Obviously long to pair with leggings. And this one is a must have for Fall...

Favorite Football or Fall Party Food?
These soft pretzels are amazing! I just made them for a party yesterday. 
You need them at your football parties or Oktoberfest parties for sure!

Orange or White Pumpkins?
I love orange pumpkins for carving and Halloween decor. But, this year I brought in some white and muted pumpkins for my Fall decor and am loving it.

Hayride or Bonfire?
Bonfire, in our backyard.

Favorite Fall Baked Good?
Anything that includes pumpkin. Especially my pumpkin cupcakes

Most anticipated Fall activity?
Hands down our visit to the pumpkin patch.
I mean it always makes for the best pictures.....
