Something New for Your Family Table Hoisin Salmon with Zucchini Slaw

 Hello Monday! We are back off a super fun weekend to see some of our favorites in concert...Zac Brown Band & Kenny Chesney. We ate some amazing food and sang our hearts out. Now it is back to dinners at home as we wrap up the kid's last full week of school. 


Our family loves salmon. It is one of our favorite sources of protein and we eat it once a week. While I love the simplicity of grilled salmon, I am always looking for ways to mix it up now and then. This recipe makes a great glaze for the salmon that is also used as the sauce for the veggies. 


While it takes some time to get the veggies prepared, the rest of the meal comes together pretty easily. 

The recipe called for spiraling everything. I just spiraled the zucchini, this fun gadget. Then I added shredded carrots and thinly sliced red pepper. Our grocery store sells the zucchini already spiraled, so that could be an option as a time saver too!



Half of the sauce mixture gets reserved for the veggies, while the other half thickens into a nice glaze for the salmon. 



Such pretty colors and fresh flavors going into this dish!


I did not cook these too long. I like them to have a little crunch to them. 


This meal was a winner. A great Summer meal with zucchini in season. If you are not a fan of salmon, I think this glaze would be great on shrimp or chicken. I would brush it on either and then grill, it would be delicious!  You can grab the full recipe here.

Eating More Green in 2019!

Happy Monday friends!!!  As we settle into January, I thought I would share some of my favorite Meatless Monday dishes. Last year we tried to eat more plant based meals and I loved it! We eliminated meat from 1-2 meals a week and I had fun with trying new and different recipes and did not find myself missing meat from every meal.

Something New for Your Family Table....Butternut Squash and Black Bean Enchiladas

Oh today is feeling like a Monday friends!!! We had a full three days away at a family wedding and I am in need of a really big mug for my coffee today! It was the most beautiful setting for a wedding and I can't wait to share some pics with you guys!
But good news is that I have a delicious Fall recipe to share with you that is a perfect way to mix up your Taco Tuesday.

Something New for Your Family Table Week #33 Summer Vegetable Couscous

Happy Monday friends! So I know the calendar says Fall, but my heart is still in Summer. So I have one more Summer-ish recipe to share with you.

Something New for Your Family Table Week #32.....Zucchini Lasagna Roll Ups

I am always looking for fun ways to use zucchini in the Summer. You can always find it at local farmers markets and it's one of those things that seems to grow abundantly in gardens, so people seem to pawn off their zucchini on anyone that will take it!
I found this recipe, made a few tweaks and we all loved it!
The recipe called for ground Italian sausage, but I had a few links of chicken sausage that I just thinly sliced. You could easily skip the sausage to make this a vegetarian dish. First step was thinly slicing the zucchini (I used my mandoline slicer), salting it, and layering it between paper towels to try and draw out some water. It said to do this for 15 minutes, but i would recommend closer to 30, as I ended up with a lot of water in my finished dinner.
While the zucchini was drying out, I made the filling.
Then I used about 1-2 TBSP of filling in each piece.  I rolled them a few different ways. The smaller pieces I stood up in my pan and the wider pieces I laid flat. 
I topped the zucchini with the sauce mixture and a sprinkle of cheese. The recipe called for 2 cups of mozzarella, but I only used about 3/4 cup. 
With just 20 minutes in the oven, it came out looking and smelling amazing! 
And I got two thumbs up from everyone at my family table!!

Something New for Your Family Table Week #31....All About Chickpeas!!!

Hey friends! I hope you all had an amazing weekend! Ours was super low key and just what we needed! I was back and forth on what recipe I wanted to share today and was thinking.... I have a new obsession with all things chickpea.. You know, garbanzo beans, chi chi beans... whatever you may call them! I feel like I am using them more and more in recipes and thought I would round up a few of my favorites. I mean, a few years ago all I did with chickpeas is add them to my salad at the salad bar....now I find myself buying them in bulk!

Something New for Your Family Table Week #30 Chickpea "Chicken" Salad

Happy Monday my friends!! I have a fun recipe to share today. So in my quest to eat more plant based meals, I stumble on this recipe for a chickpea based "chicken" salad. I grabbed the ingredients to try it out and it is amazing! I just tried it last week and have already made it twice! 

Crab & Corn with Zoodles.....or Pasta

Hey Monday!!!  Before I get sharing this awesome recipe with you, I want to say this is my only post this week. We are headed to the beach, so I am taking the week off from blogging and will be back next Monday.😉
I have a yummy, Summer-y recipe to share with you today. I saw the recipe for this Crab & Corn Pasta dish from Mix & Match Mama and thought it sounded amazing! I got all the stuff to make it the other day, made a couple tweaks and it was a hit!

Yes, I am. We have been trying to eat more plant based meals this year and I saw a fellow blogging friend, Brittany talk about brussel sprout tacos.
