Friday Favorites January 10th

  Happy Friday friends! Finally back into the swing of things after a busy holiday season. It feels like Christmas was so long ago, and yet it's only January 9th! Anyone else feeling that way??

As always, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week. 





one 

 I was reading about the benefits of a weighted vest for walking. I asked for one for Christmas, and I also got my girlfriend one as well. She was so excited to get it, she was just listening to a podcast about it, and she and I try to walk together at least once a week. We wore them together to walk last week, and it really ups the walking game!! I’ve worn it for walks outside as well as on the treadmill and I love it. I got the 12 pound version, but there are multiple options to choose from.


I was also really excited to wear two of my new gifts on our walk. I have been loving the jewel tones this season, so these green leggings and sneakers are a new favorite. These leggings are $25 and so comfortable. These are my favorite sneakers- cute and comfortable! I think this is my 6th color combination in this style.

My favorite from the last few weeks has been all the magic of Christmas. I’ll share a full recap next week, but my kids still love waking up on Christmas morning and seeing presents under the tree. I take this picture every year, and I have to put my phone way up high because they’re both taller than me now!

Before the Christmas came down, I had my girlfriends over for a fun night. Such a fun night to catch up with my girls!


And the next day, the tree came down! As much as I love the coziness of Christmas decor, I do love when it comes down!

I shared two new favorite meal ideas earlier this week, Buffalo Salmon & Sweet Potato Buffalo Chicken Bowls.

Another favorite Christmas gift was these pajamas. I love a good pajama set, and my sister gave me this set.  They are from the Gap, where I haven't shopped at in forever! They are so comfortable, and I may need to grab another color.

For Christmas, Paul and I got several books around health and wellness. Paul is halfway through one of his books, and I just finished reading this one. I found it very fascinating on how beneficial it can be to give your body a digestive rest each day



Excited to watch Luke play some basketball this weekend and then watch some playoff football! We will be doing our best to stay warm..... it is so cold here!

Something New for Your Family Table- Two Buffalo Inspired Dishes

Happy Monday, friends! Even though the new year started on Wednesday, it really feels like we kick off the new year today. My kids head back to school, and we are back into the usual routine. We had some fun over the holiday break, which I’ll share about more later this week. I also have been trying out some new recipes, and I’m excited to share them with you over the next few weeks. 

First up are two "Buffalo" inspired dinners. These Buffalo Chicken Sweet Potato Bowls were full of flavor and got two thumbs up! 


I followed this recipe as directed. The chicken cooks in the crockpot, which is a nice time saver during busy weekdays. I assembled the slaw in the morning, so it could absorb teh dressing throughout the day. I feel like slaw is better once the vegetables. have some time to marinate in the dressing.  For this recipe, I used a broccoli slaw and it was delicious. I love this mayo, as it has really clean ingredients. 

The third component were simply diced sweet potatoes that you bake. It was a really great combination of flavors.

Next up was this Buffalo Salmon.  If you’ve been here for a while, then you know my family loves salmon. I’m always looking for new ways to cook it.


 For this recipe, I seasoned the salmon fillets with salt, pepper, and garlic powder. Then I brushed on some buffalo sauce. 


I love this one, as it has all clean ingredients. It is the same sauce I used in the above recipe as well. 


I sprinkled on some panko bread crumbs, probably about one to 2 tablespoons and a little more garlic powder.
 I put them in the air fryer at 375 for about 12 minutes. I would say they would take 12 to 15 minutes depending on how thick your salmon is.



On the side, I did some roasted buffalo cauliflower. I tossed cauliflower florettes with olive oil, salt and pepper and roasted them at 425 for about 25 minutes. When they came out, I tossed them with the same buffalo sauce, some fresh chopped celery and shredded carrots. Added a little crumbled blue cheese, and it was the perfect side for the buffalo salmon. We also did some roasted mashed potatoes. For the most part, a pretty hands off meal that can be ready in about 30 minutes!

Something New for Your Family Table Turkey Enchilada Meatloaf

 Happy Monday, friends! Back with another great recipe that was new to us last month. I found this recipe for Turkey Enchilada Meatloaf through Amber Massey, and bookmarked it to try it. I mean I love enchiladas, and meatloaf is such a good comfort meal on a cold Winter day, so this seemed like a great January dinner idea. 

I feel like ground turkey can dry out fairly quickly, but this has so much goodness packed into it and gave it so much flavor, it stayed pretty moist. 

I followed the recipe as written, and just dumped everything into the bowl.



Next up, I formed it into a meatloaf shape and popped it in the oven.


After the majority of the cooking was done, you pull it out and add some additional enchilada sauce and some cheese. Pop it back in for another 10 to 15 minutes until the cheese is melted.


It might not be the prettiest outcome, but my goodness it was delicious!


I mean, just look at all of the good stuff packed into this meatloaf.




We had ours with cilantro lime rice, but it would also be good with cauliflower rice. We topped ours with a little more enchilada sauce, and some jalapeƱos.


This one got two thumbs up from everyone at the table and made an excellent lunch for Paul the next day.
