Friday Favorites February 28th

  Happy Friday friends!

As always, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week.

I took an unintentional break from blogging and social media for a bit. No specific reason, it was just a busy season of life coming out of the holiday with kids sports and had a lot going on with work. I was happy to return this week Wednesday. You can catch up a little bit about what we’ve been up to in my What’s up Wednesday post here.

one

Well, how could this not be a favorite? We celebrated my father-in-law‘s 90th birthday on Tuesday. An impressive feat to be able to celebrate that birthday, but even more impressive to be able to celebrate it in such great health!

We celebrated with his favorite coconut cream pie on Tuesday night, and we have big plans for another celebration tomorrow!

two

I started reading this book this week, and I cannot put it down. It is so interesting to read about how much external factors in food and exercise can have on your overall health and well-being. While, I’m only about a third of the way through, I highly recommend this book, it is so fascinating.

three

I have had this sweatshirt for a while now, and I haven’t worn it in quite a bit and I forgot how great it is! It’s a dupe for a very expensive brand. I love the front pocket to throw your phone in, it’s cropped, but not too short. Bonus it comes in lots of colors!

And speaking of sweatshirts, I got this one for our trip to Florida last week and loved it so much. I got it in navy as well! The fabric is so soft, it has a longer length for leggings, and it cinches at the waist for a really great looking fit!

As we continue on our little journey for healthier living, we have removed most plastics from the house and are storing food in glass containers. This is a pic of my lunch I was taking to work the other day. I love these small containers for cottage cheese or yogurt or berries. And this set comes with five glass containers and five lids. They are great for having fresh vegetables, chopped and ready in the fridge and they make the perfect size to take a salad or some leftovers for lunch.

five

This coatigan looks so expensive, but it’s a great price point fromAmazon. It’s a perfect transition piece when it’s not super cold, but not quite warm enough. I love it in the ivory, but they have several colors. And this heart necklace from Amazon has been on repeat for me!

Wishing you a great weekend! See you back here on Monday, there is always room for one more at our family table

What's Up Wednesday February 2025

Hi friends! It's the last Wednesday of the month and I am linking up with Shay and Sheaffer for a little What's Up Wednesday. I fun post sharing a little food, a little what we're wearing, a little what we're doing, a little what we're watching and a little bit of everything all in one post!

What We're Eating This Week

Here are a few favorites that we have been eating. These Buffalo Chicken Sweet Potato Bowls are an easy weeknight dinner, as the chicken can cook in a crockpot throughout the day.

I have been obsessed with salads lately.  I’ve been taking a fun salad to work with me every day for lunch!

And making a colorful salad for dinner too!

What I'm Reminiscing About

We wrapped up our last three college visits down in Florida last week. It had me thinking back to the Summer when we visited colleges in South Carolina and North Carolina. You can see all about those schools here.

What I'm Loving

I got this candle warmer for Christmas and I love the little light it brings to the kitchen! I have a clean burning candle on there (no funky chemicals) and it's great to not worry about an open flame. I also got this Cookbook holder that looks great next to it! It's a pretty little corner of my kitchen. And this is my latest Cookbooks purchase!

I am also obsessed with This mask ! It has a cooling feeling and helps to de-puff! I use it twice a week and love it!

What We've Been Up To

Last week we found ourselves in some warmer weather, visiting colleges.

We visited some family, some colleges,  ate some amazing food, and soaked up the sunshine.

And of course had to make a stop at Buc-ee's on our way. If you know, you know!!!

What I'm Dreading

The weather that comes with March. here in the northeast. We don’t really get a great spring. We go away every year in February, and it spoils me because I come back and think that it should feel like spring, and unfortunately, it’s just not. We deal with a lot of gray and gross snow and melting, snow and mud, and it’s just not my favorite!

What I'm Excited About

I have a fun work trip planned in a couple weeks. We have our annual conference in Disney World. I am flying in a couple days early with some of my peers. Looking forward to a couple days of relaxing and then a great week of meetings. Our meeting has been there the last few years, I shared some of the fun from last year here.

What I'm Watching/Reading

I have read two great Wellness books recently. This first one is a super simple read. I don’t know if there’s anything groundbreaking here, just a really nice recap of the basics on how to live a healthier and clean life.

This one I am only about a quarter of the way through, I just started it. My husband, Paul read it and loved it. So far so good.

What I'm Listening To

I randomly found a playlist on Apple Music that was called The Sandbar. It is such a fun mix of country music with a little bit of a beach scene.

It’s going to be perfect on the boat this summer.

What I'm Wearing

Honestly, I feel like I’m in a bit of a slump with this category. The weather has just been so cold and dreary that I haven’t had much excitement to get dressed. I did however find this amazing set that I bought for Florida.

I got it in the taupe and the navy. The jacket is great. It cinches at the waist, so it gives a nice flattering fit and is long enough to wear with leggings. There is also a coordinating short that goes with it as well.

I have been on the hunt for some sneakers. I was looking for a better sneaker to walk or run with. I have really wanted to try the Hooka sneaker for so long, but I just couldn’t get over how they looked. I feel like they look like a corrective shoe. I found the style, and I really am loving the fit and how they look. They are super comfortable.

I was also looking for a comfortable pair of shoes that I could wear to work with jeans. And these neutral new balances are it. I also wore these walking around campus in Florida and they were super comfortable.

What I'm Doing this Weekend

We are celebrating my father-in-law’s birthday! He turned 90 yesterday and we are having a little celebration at our house to celebrate. All of his grandkids will be there, flying in from around the country and we are so excited to celebrate our Bud!

What I'm Looking forward to Next Month

Well, aside from my work trip to Disney, I am also beginning a new position at work. It’s a much bigger role than I currently have, and I’m really excited for the new challenge! I begin my training in a couple of weeks and will be officially in the role to kick off April!

Wishing you a great Wednesday! I hope to see you back here later in the week for Friday favorites. There’s always room for one more at our family table.!

Friday Favorites January 10th

Happy Friday friends! Finally back into the swing of things after a busy holiday season. It feels like Christmas was so long ago, and yet it's only January 9th! Anyone else feeling that way??

As always, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week.

one

I was reading about the benefits of a weighted vest for walking. I asked for one for Christmas, and I also got my girlfriend one as well. She was so excited to get it, she was just listening to a podcast about it, and she and I try to walk together at least once a week. We wore them together to walk last week, and it really ups the walking game!! I’ve worn it for walks outside as well as on the treadmill and I love it. I got the 12 pound version, but there are multiple options to choose from.

I was also really excited to wear two of my new gifts on our walk. I have been loving the jewel tones this season, so these green leggings and sneakers are a new favorite. These leggings are $25 and so comfortable. These are my favorite sneakers- cute and comfortable! I think this is my 6th color combination in this style.

two
My favorite from the last few weeks has been all the magic of Christmas. I’ll share a full recap next week, but my kids still love waking up on Christmas morning and seeing presents under the tree. I take this picture every year, and I have to put my phone way up high because they’re both taller than me now!

three
Before the Christmas came down, I had my girlfriends over for a fun night. Such a fun night to catch up with my girls!

And the next day, the tree came down! As much as I love the coziness of Christmas decor, I do love when it comes down!

four
I shared two new favorite meal ideas earlier this week, Buffalo Salmon & Sweet Potato Buffalo Chicken Bowls.

Both were winners in our house! You can get the recipe details on both here.

five
Another favorite Christmas gift was these pajamas. I love a good pajama set, and my sister gave me this set.  They are from the Gap, where I haven't shopped at in forever! They are so comfortable, and I may need to grab another color.

six
For Christmas, Paul and I got several books around health and wellness. Paul is halfway through one of his books, and I just finished reading this one. I found it very fascinating on how beneficial it can be to give your body a digestive rest each day

Excited to watch Luke play some basketball this weekend and then watch some playoff football! We will be doing our best to stay warm..... it is so cold here!

Wishing you a great weekend! See you back here on Monday, there is always room for one more at our family table

Something New for Your Family Table- Two Buffalo Inspired Dishes

Happy Monday, friends! Even though the new year started on Wednesday, it really feels like we kick off the new year today. My kids head back to school, and we are back into the usual routine. We had some fun over the holiday break, which I’ll share about more later this week. I also have been trying out some new recipes, and I’m excited to share them with you over the next few weeks.

First up are two "Buffalo" inspired dinners. These Buffalo Chicken Sweet Potato Bowls were full of flavor and got two thumbs up!

I followed this recipe as directed. The chicken cooks in the crockpot, which is a nice time saver during busy weekdays. I assembled the slaw in the morning, so it could absorb teh dressing throughout the day. I feel like slaw is better once the vegetables. have some time to marinate in the dressing.  For this recipe, I used a broccoli slaw and it was delicious. I love this mayo, as it has really clean ingredients.

The third component were simply diced sweet potatoes that you bake. It was a really great combination of flavors.

Next up was this Buffalo Salmon.  If you’ve been here for a while, then you know my family loves salmon. I’m always looking for new ways to cook it.

For this recipe, I seasoned the salmon fillets with salt, pepper, and garlic powder. Then I brushed on some buffalo sauce.

I love this one, as it has all clean ingredients. It is the same sauce I used in the above recipe as well.

I sprinkled on some panko bread crumbs, probably about one to 2 tablespoons and a little more garlic powder.
I put them in the air fryer at 375 for about 12 minutes. I would say they would take 12 to 15 minutes depending on how thick your salmon is.

On the side, I did some roasted buffalo cauliflower. I tossed cauliflower florettes with olive oil, salt and pepper and roasted them at 425 for about 25 minutes. When they came out, I tossed them with the same buffalo sauce, some fresh chopped celery and shredded carrots. Added a little crumbled blue cheese, and it was the perfect side for the buffalo salmon. We also did some roasted mashed potatoes. For the most part, a pretty hands off meal that can be ready in about 30 minutes!

Hope you give these a try, they were both winners at our house!

Wishing you a great Monday! See you back here later in the week, there is always room for one more at our family table.

Something New for Your Family Table Turkey Enchilada Meatloaf

Happy Monday, friends! Back with another great recipe that was new to us last month. I found this recipe for Turkey Enchilada Meatloaf through Amber Massey, and bookmarked it to try it. I mean I love enchiladas, and meatloaf is such a good comfort meal on a cold Winter day, so this seemed like a great January dinner idea.

I feel like ground turkey can dry out fairly quickly, but this has so much goodness packed into it and gave it so much flavor, it stayed pretty moist.

I followed the recipe as written, and just dumped everything into the bowl.

Next up, I formed it into a meatloaf shape and popped it in the oven.

After the majority of the cooking was done, you pull it out and add some additional enchilada sauce and some cheese. Pop it back in for another 10 to 15 minutes until the cheese is melted.

It might not be the prettiest outcome, but my goodness it was delicious!

I mean, just look at all of the good stuff packed into this meatloaf.

We had ours with cilantro lime rice, but it would also be good with cauliflower rice. We topped ours with a little more enchilada sauce, and some jalapeƱos.

This one got two thumbs up from everyone at the table and made an excellent lunch for Paul the next day.

You can grab all the recipe details here. Hope this one makes it to your table this month!

Wishing you a great week ahead. See you back here later this week, there is always room for one more at our family table.

xoxo
