Five Meals for Your Family Table..... Week 12

Oh hey Monday!! This weekend finally felt like Spring here... warmer temps and a bit of rain. Sharing some great Spring recipes this week, with an easy frittata and a fresh scallop pasta dish. Grab your pencil, write your grocery list and this week's meals are covered.

I love salmon and am happy my family does too! This dish is so simple and fresh...perfect for a busy weeknight! If your crew is not a fan of salmon, you can easily sub in a different fish! You can get the recipe here.

Maple Weekend was celebrated here in New York the past two weekends and it inspired me tomake my Maple Glazed Chicken. This is one of my favorites in the fall, but can be just as delicious in the Spring too! For the glaze, whisk together 1/4 cup  EVOO, 1/4 cup pure maple syrup, 1 TBSP whole grain mustard and the zest & juice of half an orange. Brush it on one pound of boneless chicken breasts and bake at 400 for 20-25 minutes, or until the chicken is cooked through. I have it here with some maple glazed squash, but you can do pair it with any vegetable you want!

I am squeezing out one more crockpot meal, before I pretty much grill everyday from now until November! Ha! This pork cooks all day...and as a bonus, we can usually get dinner for two nights with this one! We will do sliders one night and serve over rice the next night. I have also topped a spinach salad with pulled pork... it's delicious!
Thinly slice a large onion and lay it in the Crockpot. Place about 3 pounds of pork shoulder on top and sprinkle with salt & pepper. In a bowl, mix 3 TBSP brown sugar, 2 TBSP Worcestershire sauce, 3 TBSP yellow mustard, 2 cloves of chopped garlic, 1/2 cup vinegar, 1 cup chicken stock and pour over the pork. Cook on low for 6-8 hours. Take out the pork, shred it, and dump the liquid, reserving 1 cup. Put the pork back into the Crockpot with 1/2 cup of your favorite BBQ sauce and some of the reserved liquid. Cook on low for another 30 minutes.

This frittata is easy and a great way to empty out the fridge. You can use any veggies, meat or cheese you want! Take 10 eggs, 1/2 cup milk, 1/2 tsp salt, 1/2 tsp pepper gently whisk together and set aside. Using a large, oven safe fry pan heat a few TBSP of EVOO and saute a few cups of chopped vegetables. I used onion, peppers, and broccoli. Saute until softened. Add your meat (precooked) and 1/2 cup shredded cheese to your egg mixture and pour over the veggies. I added ham in this one, and I did not add cheese.  Do not stir, and cook over medium-high heat for 2 minutes. Transfer to the oven and cook at 375 for 12-15 minutes, until the eggs are set. You can slide it onto a cutting board to slice.

So I mentioned how this weekend had me feeling Spring like and for me that means fresh, simple meals. This Lemon & Asparagus Pasta with Scallops is just perfect for Spring. You can also use shrimp if you don't like scallops. Grab the recipe here.....it's some of my favorite flavors of Spring in one bite! 
A few tips to make your meals easier this week....
Chop your veggies. I cut up my asparagus and put it with the lemon.
The broccoli is for our pulled pork night.
Chop the veggies you want to use in your frittata and have them bagged together. Makes is easy to just dump in the pan.
I chop those same veggies every week....peppers, cucumbers and carrots. That way I just toss a mix in a baggie and they are the best car snacks. And they are so easy for the kids to grab for their lunch or an after school snack.

Lemon & Asparagus Pasta with Grilled Scallops

Asparagus is hands down one of my favorite vegetables. I love it steamed, grilled, or roasted and in the Spring I cannot get enough of it! This simple pasta dish just screams Spring to me. My kiddos ask for seconds, which is always a win in my book!
Ingredients
1lb pasta ( we use whole grain)
1lb sea scallops (can also use shrimp)
1lb asparagus, cut into bite sized pieces
1 lemon
3 TBSP EVOO, plus more to drizzle
2 cloves of garlic (minced)
Fresh Goat cheese
Place the scallops in a grill basket and drizzle with EVOO, salt & pepper and the juice and zest of half the lemon. Toss to coat and grill about 10 minutes, until the scallops are opaque and cooked through. 
Cook the pasta according to instructions, adding the asparagus for the last 4 minutes of cook time.
Drain the pasta & asparagus.
In the same pot, add the EVOO, the garlic, and the zest and juice of the remaining half lemon. Cook on med-high for 1-2 minutes.
Return the pasta and asparagus to the pot and toss to coat. Season with salt & pepper.
Plate some pasta mixture and top with the scallops and some crumbled goat cheese

Salmon & Citrus Quinoa

So we try to eat fish at least once a week. Salmon is one our favorites, but you can easily switch this out with another fish if your family is not a fan of salmon. Fish cooks very quickly, which is why it is one of my go-to's on a weeknight. This Salmon with Citrus Quinoa is made with some simple ingredients and is delicious!
Ingredients
4 salmon fillets
1 box of quinoa
3 TBSP of EVOO (plus more for drizzling)
1 orange
2 TBSP chopped scallions or chives

Start by cooking your quinoa according to package instructions. 
Then drizzle your salmon with a little EVOO and sprinkle with salt and pepper. You can either grill it (about 5-6 mins per side) or put the fillets into the oven (on a foil lined pan) at 425 for about 15 minutes. 
While your fish & quinoa are cooking, you can make a quick flavoring for your quinoa. Mix 3 TBSP of olive oil with juice & zest of half an orange and 2 TBSP of chopped scallions or chives. Pour this over your cooked quinoa and toss to coat. 
Squeeze the other half of the orange over the salmon when if comes out of the oven. 
Place the salmon over your couscous and add something green to round out your plate!

Friday Favorites

It's Friday!!!! It's been a nice week. I have been loving the longer days and seeing the sun this week! As usual, I am linking up with  AndreaNarci, and Erika to share a few of my Friday Favorites. Just a random assortment of things that made me happy this week!

Hands down my favorite part of this week was celebrating World Down Syndrome Day on Tuesday. I shared a blog post all about my sister Emma and the response I got was just awesome!

And then I saw an Instagram post from my favorite local shop, Research & Design. There was the sweetest little girl in a "21" shirt. Come to find out the shop had these "21" shirts made to help raise awareness for Down Syndrome. I mean my heart could not be more full! I went right out and got mine!
Then I messaged the mom of the sweet little inspiration behind the shirts. I wanted to share my story about Emma and learn more about her sweet Shea.  It was such an amazing day and I was so happy to share more of Emma with the world and to meet Shea (if only through Instagram). I sure hope I can meet her in person someday!
ps... The "21" is symbolic of the 21st chromosome. The embryo has three copies of chromosome 21 instead of the usual two. This is why World Down Syndrome Day was chosen to be celebrated on 3/21.

We may have finally turned the corner to warmer weather.....I hope!! This week it was so nice to see the blue sky and sun....even if it was still cold. But there is no snow in the forecast, so I think we are finally done! The blue sky & sun made me yearn for dinner from the grill, so Paul was out there in his ski coat and hat....grilling away!

Random pics of the kids this week.....
Ella has been wishing for Converse high top sneakers and she finally got a pair last week. She loves everything in the mint/teal color family, so of course that's the color she picked! She looked  adorable heading out to school in her head to toe teal!
And this guy.....Luke loves being in sports clothes most days, but give him a reason to "dress handsome" and he is all over it! I bought him a sport coat last year and he takes his handsomeness to another level. He had a field trip to the local youth theater and they were told to wear theater attire and he picked out this outfit.

My last favorite this week hasn't happened yet..... it's just some excitement for our weekend plans! Paul and I are heading out to dinner with friends tonight for Local Restaurant Week. And tomorrow my brother and his family are coming in for the weekend. We are celebrating Luke's birthday and my nephew Nicholas' at a local Hibachi restaurant. The boys are so excited for dinner and even more excited for a cousins sleepover!

Luke's 7th Birthday....Touchdown!

I am planning Luke's 8th birthday party details and thought it would be fun to share some of the details from this 7th birthday. I just started blogging last fall, so I haven't blogged about his parties yet... and I know I am always looking for fun themes & ideas!
Luke was really into football last year and wanted a football party. His vision was to have a football game with his friends in the yard and that was our plan. I had ideas for football themed snacks....he wanted pizza... and good friends playing football.
Then I saw the 10 day forecast. It was going to be snowing and 20 degrees....in April. The outdoor game went out the window and I got to searching for football things we could do inside!
I made a "goal post" out of yellow ballons and an empty wrapping paper roll covered in yellow paper. It turned out pretty cool!
I put a green plastic table cloth as a backdrop and hung some of this favorite team pennants. The sides are just streamers that I tape at the top, twist on the way down and tape at the bottom. I used his favorite team colors. I love how it looks and have done this for a few parties. Bonus... at .99 a roll it's an inexpensive way to add some fun to the party!
Each boy had a "football", we blindfolded them and they had to pin the ball between the posts
Obviously there was a lot of "dabbing"! 
Luke has an artistic side to him...loves to draw and color. I thought it would be cool for the boys to design their own jerseys. I grabbed poster board at the dollar store and cut them into jersey shapes, then added their last names with sticky letters.
They asked for logos of their favorite teams to add, so I printed those out. 
We had a snack bar with some favorite ball park snacks....
 
And the boys took home Super Bowl Rings (ring pops), penalty flags (rubberball wrapped in felt), and a football cup filled with some football candies & a mini ball.
 This was my attempt at making a cake look like a football field.... and yes it made for some green mouths!
 And eye black was a hit under everyone's eyes! 
So even if our original plan didn't work out.. we still scored a touchdown with this fun party!

Weekend Wrap Up....Shenanigans Edition

Thank you so much for all the love on yesterday's post. Celebrating World Down Syndrome Day was made so special with all the love we felt for our Emma! Thank you!
Now a little recap on St Paddy's Day weekend.. Oh gosh we had so much fun on St Patrick's Day! The kids did not catch that leprechaun......
but he did leave behind some treats.......
and turn the toilet green and TP'd the bathroom!
The kids were happy to wear their green and head off to school!
Friday night the kids and I went up to our neighbors house for some fun!  The kids played in the snow, watched a movie, snacked and we all shared some of our Irish dance moves!
 Such a fun night...and a late one..we got home at midnight!
The kids slept in on Saturday after such a late night! Ella and I ran a few errands and went grocery shopping. Dance season is starting soon, with competitions, recitals and other performances so we made our list of stuff we need. One of which was new lyrical shoes....she has literally worn them out!
Poor girl's toe popped right through! She sure dances her heart out each week!
It was snowy.....again....so it only seemed right to make some cookies. My Oatmeal Butterscotch cookies were the perfect Saturday night treat!
And they helped ease the pain as we watched some of our favorite teams lose during March Madness. #bustedbracket
Sunday brought my long run....15 miles. I was so proud of myself for doing it....the first 12 miles were ok..... the last 3 were rough! I wonder what 11 more will feel like?!?!  I must admit it's getting a little harder to train...these long runs take up a lot of time! But  I am happy to be in week 9, so about halfway there!
And after I was starving. Like I could not stop eating all night. And then I saw my girlfriend (and running partner) share this.....
apparently there's a term for it! I was definitely rungry on Sunday!
