Something New for Your Family Table - A Five Ingredient Dinner

Happy Monday friends!!!! This weekend was a blur! Full day of sports on Saturday and then some laundry & groceries on Sunday morning before I jet off for a 3-day work trip. 

I saw this 5-ingredient recipe from Living My Best Style and it was just what we needed after sports all day Saturday. I assembled it early Saturday morning, so all I need to do was pop in the oven when we got home. Bonus- it makes a lot, so dinner is done for tonight too!

She did not share exact measurements, but these were the 5 ingredients

1 pound pasta (any shape)
1 large jar sauce or 2 to be safe, pending your preference
Cottage cheese (2 cups)
1 pound ground beef (or meat of choice)
Broccoli (4 cups chopped)


I browned & drained the beef, while the pasta was cooking. You could easily sub in ground turkey, chicken or sausage.  If you don't have this meat chopper, you need it in your life! I also seasoned the meat with salt, pepper and garlic powder.




Once the meat & pasta were cooked, I added them to a 9*13 baking dish. Added my broccoli, cottage cheese and covered with sauce.  Again, I think this recipe is pretty forgiving, so measurements are kind of eyeballed. If you like your pasta bakes "saucier" then add more sauce. Or keep some sauce warmed to add when you are serving it. 



Gave it a good mix and then threw in the fridge while we headed out. I baked it 375 covered for 20 minutes, gave it a stir and finished uncovered for another 20 minutes. 


Such a good comfort meal, with some nice added protein with the cottage cheese!


This is a great meal to make ahead for a busy weeknight & it makes a lot to serve friends or have leftovers.

Friday Favorites October 25th

 Happy Friday friends! Gosh time seems to be flying by!! Let's not waste any time getting into our favorites from the week!

 Loving this green Set from Target. Perfect color for Fall and Winter and a great price point to try a new color in your workout wear. I’ve always said I will invest in black or neutral pieces, but when I want to try a fun color, I usually go towards Target or Old Navy. I think they both have good quality for the price point.


I also grabbed the matching sweatshirt.

Last week I made and shared the recipe for these protein pumpkin energy bites. The perfect  little afternoon treat. You can see the details here. And loving this tray for Fall.


And speaking of pumpkin, these are two of my favorites from Trader Joe’s this time of year. Both are seasonal items, so you’ll have to get in there now to get them while you


I also grabbed this combination at Trader Joe’s. This was a winner for dinner this week! I just browned up some Italian sausage and then added the sauce to the sausage. Boiled the pasta and then put the sausage and sauce on top. It was surprisingly better than I expected. My crew also loved it, & they can be hit or miss when it comes to squash or pumpkin like things. I will definitely be grabbing some more to make again this Fall. A super simple dinner idea.

Last weekend, Paul and I headed out to see the Fall leaves from the water. We had a great afternoon kayaking & I shared a little bit about our adventure on my weekend recap

We went to see Justin Timberlake Monday night. I think it’s my fourth time seeing him. He’s just so entertaining, between his music, dance moves, and connection with the crowd. We had originally gotten tickets for myself and Paul and my girlfriend and her husband to go and then Ella was talking about getting a ticket. So before we knew it we turned it into a girl's night. 
How fun are Ella’s pants???


We had the best night! I have shared this on here before, but this is my longest friend Erin. We met when I was four and we were in kindergarten. We lost touch during our college years and our 20s, ( you know no cell phones then!) and then randomly reconnected when we ended up living on the same street!  



My outfit was brought together courtesy of Amazon. I got this lace top to layer with a denim vest and finished the look with this heart necklace. I loved the look!


I shared all my recent Amazon favorites on Wednesday. You should check it out... a whole lot of randomness!!!

After a night of dancing and heels at the concert, this was my work look for Tuesday morning. I love this little jacket from Amazon. A cute and casual way to jazz up an outfit. It comes in several colors and I think the camel or black would be great for Fall! And clearly needed some comfy sneakers!

I got a new delivery of my favorite protein powders. I love both of these flavors. Clean ingredients, and it mixes really well with just milk....you don’t have to get a blender!  I just throw a scoop into like 8 ounces of almond milk shake it up and drink it. It’s a great way to get in some added protein. I love adding the vanilla to some plain Greek yogurt and top  with some granola and berries for breakfast.

Luke and I were eating a snack on the couch and the dog was there waiting for a treat. I set one piece of popcorn on the armrest for her and she wasn’t sure if she was going to eat it or not. We just snapped this picture of her cute little face.



We are starting to wrap up Fall sports this weekend with volleyball playoffs & cross country team championships! Then I head out Sunday for a quick work trip.

Amazon Lately


 Happy Wednesday friends!  I don’t know about you guys, but I love to see what people have been getting in their Amazon deliveries or what's in their Target cart or even a grocery haul! So I thought I would share my recent purchases from Amazon.


So here we go with a whole lot of randomness that has arrived on my doorstep lately!

First up, we went to the Justin Timberlake concert this week and my outfit was brought together courtesy of Amazon. I got this lace top to layer with a denim vest and finished the look with this heart necklace. I loved the look!


I have shared these before, but last month I got these napkin rings. I love the different patterns, and if you are hosting Thanksgiving, I think they are a perfect addition to your table. I got this set of 12 for less than $15.



I love a blazer, not just for work, but even for a night out. You can wear it for work with dress pants or even jeans or wear it for a night out with a pair of leather leggings. This one has a great length, great price and comes in several colors.


This sweater I have had forever, but it’s still available. It’s just a nice lightweight sweater. It’s very long, so perfect to wear with leggings and super comfy. 


These leopard heels are a fun way to try the leopard trend this season!  My teenage daughter swiped them to wear to the concert!


I grabbed this little pouch for Ella’s car for her birthday. I filled it with a bunch of essential car things. If you are looking for a pouch to keep in your work bag or in your car, this one is a perfect size. (I added the patches separately.) 


Random, but this cake topper is perfect for a birthday. It’s simple, it’s sparkly. comes in lots of fun colors and it’s under five dollars.


I have shared before that I don’t love getting my nails done. I just can't sit in one spot for that long, with literally my hands tied....so I typically paint my nails every Sunday night. And I love trying out some new colors. These have been two unexpected fun colors for Fall. This dark blue color & this purple, which I also think would be fun for Halloween. 



Another great way to try the leopard trend is with a belt. This leopard belt I’ve had for a while, but I just updated it with this new three pack


I never thought I would be "a Stanley person."  But my girlfriend got me this one forever ago on Amazon so I’m sharing because I do actually love it. I think the handle is what sold me. It's a nice option to have when carrying work bags or a million other things to the car.  I may have grabbed a few for holiday gifts.


Here’s a super random one. Luke recently got his braces off and is wearing a retainer. I saw Brittany from A Healthy Slice, share these all natural retainer cleaners. So I got them. You just drop a tablet, add some water and let it soak. I feel good that it's getting clean, as I was slightly unsure of what he does with it....ick!


Another random one are these silicone covers. These are great for shampoos, lotions or face cleansers if you’re traveling with the full size options.  They help prevent them from leaking in your bag- genius!! There are 8 in the pack for under $10. 


I love these beauty blenders. I have used them for years. I’ve probably purchased them half a dozen times. They’re like seven dollars for a set of 5 & a great beauty steal!



This is not a recent purchase, but this free people fleece dupe is still a favorite. I bought it in two colors last year and it’s still available and still wearing it this year.

Weekend Wrap Up & Something New for Your Family Table

Happy Monday, friends. Today is feeling extra Monday-like. Coming off of a relaxing week off. It was a great mix of some relaxing time as well as getting some stuff done. Like when you’ve got six bags in the hallway, ready to go to donation! Closet, clean out complete!! And I was winning because I took them the same day. They typically ride around in my trunk for a couple of weeks....and I know I am not alone in that!


I strolled around HomeGoods aimlessly, and got this mug. Do I need another one? No. But it is so darn cute!


I was so happy to have time to try out a couple of new recipes. Ella sent me this one to try, t pumpkin protein bites dipped in dark chocolate. All clean ingredients, and delicious. They are like the perfect little treat in the afternoon or after dinner. You can get the recipe details here



I also made this stuffed shell recipe last week as well. I substituted cottage cheese for the ricotta to add some more protein to the dish. You could easily double this one while making it and have a pan freeze. We had this on a night when Paul was out of town, so I made it and separated into two smaller pans. The kids and I had it last week with a salad.  The second one I froze and can use it on a night when I’m traveling or Paul is traveling for an easy dinner during the week. This was a picture of my kitchen on a random Tuesday afternoon. My happy place is in the kitchen!

Thursday night we caught Luke’s volleyball game, and then he was working the football game concession stand and Ella had gone to dinner with some friends. So Paul and I stopped by one of our favorite local spots to grab a cocktail and dinner at the bar while we watched some playoff baseball.


We came home and then snuggled up with these two!


I wore this denim jacket from Target. I love a denim jacket & I have a lot of them. But this one is probably one of my new favorites. The gold stud detail on it is so good, it looks desinger!


This tree in my front yard just makes me happy this time of year.

Friday night we headed out to watch Ella race. It was the Sunset Stampede. She has run this race every year for the last six years. They run close to sunset and then watch the sunset over the lake. Lots of kids actually jump in the lake after the race. This race has typically had terrible weather. We were so lucky to have like 60° and sunny. We took both of our parents and It makes me smile to see their matching white Buicks parked at the house.

It really was the perfect night!


After the race, we stopped at Aunt Millie’s family restaurant. It has been our tradition after this race. 


Saturday morning Paul and I headed out to do some kayaking and see the Fall leaves from the water.



It was an absolutely gorgeous day. It is rare to find such a beautiful day in October here in the NorthEast.


We took a break halfway through. It was just so pretty & peaceful. You can see the reflection of the trees in the water.


We packed ourselves a little bottle of wine and some sandwiches and had a little picnic lunch before kayaking back. 


A fun Fall day on the water!

Sunday getting back to all the things before heading back to work. Meal prepping, laundry, & setting up the kids schedules for the week. We have a full week ahead as we wrap up one of the last weeks of the Fall sports season.

And on a super fun note, Ella and I are headed to the Justin Timberlake concert tonight!
