Happy Monday friends!!!! This weekend was a blur! Full day of sports on Saturday and then some laundry & groceries on Sunday morning before I jet off for a 3-day work trip.
I saw this 5-ingredient recipe from Living My Best Style and it was just what we needed after sports all day Saturday. I assembled it early Saturday morning, so all I need to do was pop in the oven when we got home. Bonus- it makes a lot, so dinner is done for tonight too!
She did not share exact measurements, but these were the 5 ingredients
1 pound pasta (any shape)
1 large jar sauce or 2 to be safe, pending your preference
Cottage cheese (2 cups)
1 pound ground beef (or meat of choice)
Broccoli (4 cups chopped)
I browned & drained the beef, while the pasta was cooking. You could easily sub in ground turkey, chicken or sausage. If you don't have this meat chopper, you need it in your life! I also seasoned the meat with salt, pepper and garlic powder.
Once the meat & pasta were cooked, I added them to a 9*13 baking dish. Added my broccoli, cottage cheese and covered with sauce. Again, I think this recipe is pretty forgiving, so measurements are kind of eyeballed. If you like your pasta bakes "saucier" then add more sauce. Or keep some sauce warmed to add when you are serving it.
Gave it a good mix and then threw in the fridge while we headed out. I baked it 375 covered for 20 minutes, gave it a stir and finished uncovered for another 20 minutes.
Such a good comfort meal, with some nice added protein with the cottage cheese!
This is a great meal to make ahead for a busy weeknight & it makes a lot to serve friends or have leftovers.
