Beauty Edition....The Blended Blog

I am linking up with the ladies over at The Blended Blog for their monthly Q&A. This month is all about beauty.
Now before we get started, I want to clarify I am by no means a beauty expert. I would consider myself more in the beauty competent bucket if that is even an option. I like to dabble with products, but I would not say I am a "product junkie". There are days I go makeup-less, days I sport my everyday makeup and sometimes I glam it up for a night out. And by glam it up I mean maybe a darker lip color or darker eye shadow...nothing too crazy!

Something New for Your Family Table #8.... Black Bean & Spinach Enchiladas

Hi friends! I hope you guys had a great weekend. My kids got a bonus day, when we woke up to a Winter Wonderland on Friday and they had a snow day!

They played in the snow all day. We had a pretty low key weekend and the sun was shining all day Sunday... it was a beautiful morning!

I have a favorite plant based recipe to share with you today, these Spinach & Blackbean Enchiladas. I stumbled upon this recipe a few years ago and just love it! You can get the recipe here. I follow the recipe pretty closely, except I only use about half the cheese that is called for. In the recipe you will make your own enchilada sauce and it was much easier than I thought it would be. 

You can make these ahead of time and just bake them up when ready.  Filled with black beans, corn and spinach, they are very filling! We top ours with a dollop of plain Greek yogurt and some sliced avocado. Bonus... we always have leftovers...a perfect lunch the next day!

TGIF friends!!! We made it through the first week back from vacation! It's always tough getting back in the swing of things, but the sunshine we had early this week and the extra daylight sure helped make it easier!

A Little March Fun!

It's March 1st! That means this month will be full of shenanigans here at our house! I grew up in a community with a strong Irish heritage, so St Patrick's Day was always a pretty big deal. I am always up for a fun holiday, so we have lots of shenanigans planned here this month!
