Friday Favorites August 2nd

   Happy Friday friends! I cannot believe we are here on the first Friday of August. Here in the Northeast, our kids don't go back to school until the first week of September, so we have plenty of Summer left!  

As usual, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week.

We celebrate my sister's 39th birthday this week! 



She is the best sister and the proudest aunt!

My favorite go to work combo lately has been a maxi dress and jean jacket. It's easy and comfortable!
I forget about my black denim jacket sometimes, I often go to my blue ones. This dress is from Target, but sold out. Linking a similar one here. 


I love a really light washed denim jacket for Summer! And you can never go wrong with a basic black maxi.

Summer reading is a favorite of mine. You can't go wrong with a book in a hammock, on a boat or on the beach! This book was so good!

I love watching the Olympics. And Snoop is just an added bonus! He has added such a fun layer of entertainment. We love swimming, track and field and gymnastics!

While I love getting my workouts in class in the mornings, Summer walks are a favorite too! Talking with a friend along a pretty trail is good for the body and the mind!


This tank has been on repeat! Lots of colors, built in bra and a really flattering fit!

What's Up Wednesday July 2024

  Hi friends! It's the last Wednesday of the month and I am linking up with Shay and Sheaffer for a little What's Up Wednesday. I fun post sharing a little food, a little what we're wearing, a little of what we're doing, a little what we're watching and a little bit of everything all in one post!



What We're Eating This Week

I shared this recipe for Greek Chicken Meatballs on the blog on Monday. We love a good bowl meal and this one has great flavors. 


These BBQ Chicken Naan Pizzas are a perfect meal for Summer. They come together so quick and everyone can customize to their liking. 


And these Sesame Ginger Steak Skewers were a winner at our table!! I share our meal plan each week over on Instagram stories. We would love to have you follow along there. 



What I'm Reminiscing About

While I love my kids at the age they are at, I do sometimes miss these years... like when they would randomly want to host a lemonade stand. 


But I do love the fact that I also have a licensed driver now and I can send her to the grocery store to grab something I may have forgotten to make dinner!


What I'm Loving

Kind of random, but these shorts! They are a fraction of the price of Lululemon. Come in lots of colors and are super comfortable. The waist band is not constricting, they don't ride up between my legs when I walk and they have a convenient little zip pocket. 



What We've Been Up To

Well after an amazing trip to the Carolinas, which you can read about here. And a fairly adventurous trip to Lake George, which I will share about soon... but this boat pic is a hint....


We are enjoying some much needed time at home, relaxing!


And going out for ice cream!


And watching my plants bloom.... especially because I am not known for a green thumb!


And as much as I love to travel and see new places, I do love my routine. Things like working out with my girl every week makes me happy!


What I'm Dreading

The end of Summer. No question about it. 


What I'm Excited About

This is Ella's senior year! While it’s bittersweet, I’m so excited for her to experience all the fun things in her senior year of high school. 



I’m sure in a few months I’ll be switching this to my "what I'm dreading category", but for now I’m really excited for her!


What I'm Watching/Reading

Olympics! I just love watching them! Track & field, swimming, and gymnastics are my favorites. Paul and Luke are both into USA Basketball, and I am also loving the commentary from Snoop!



 It's so awesome seeing these athletes that have worked so hard for their dreams, become a reality!

I recently read these three books. This first one I liked, but didn't love. 


This next one was by the same author and I loved it. There were some references from the first book, but it's not a series. I cried my way through the last 20 pages!


This last one was Swan Song from Elin Hildebrand. I have read so many of her books based in Nantucket. This was her final novel in that genre and it was ok. I didn't hate it and I didn't love it. I loved all the character and places references from her other books, but it just didn't tie it all together like I hoped. It felt a little unfinished. 


What I'm Listening To 

Oh just Paul & I commentating the Olympics and realizing we have no idea what we are talking about!

       


What I'm Wearing

 A little recap of some vacation inspired looks. This dress was so cute for a Summer dinner. And Ella's was so pretty on her, I loved the tiered look. Her dress is under $25 and comes in 4 colors. 


This workout tank is sooooo good!!! Like I can't say enough about it, and half the price of Lulu Lemon. It comes in like 20 colors too!  And Vineyard Vines hats are my most favorite to wear in the Summer. 


My white blazer has been a Summer staple! It’s still 50% off!! And I get compliments on these shoes every time I wear them!


I got this swim cover up years ago, but it's so good! It's comfortable, works if you are eating at a beachside spot and comes in several colors. I have it in black too!


I think I shared this last week, but these tanks from Old Navy are my Summer go to. With a built in bra, straps that don't fall down, and several color options you can't go wrong! These are my favorite sneakers. They are beyond comfortable, look cute and I am embarassed to admit how many pair I own.....



 I have this tee from Free People in white that I love, but then found a dupe for half the price. The FP one is a bit lighter weight. This one is thicker, but a very similar style. Really comfy to throw on to head to a workout to be outside, it's very breathable. 



What I'm Doing this Weekend

Actually not a whole heck of a lot and I am ok with that!!


What I'm Looking forward to Next Month

While I do love the more low key schedule of Summer, I am ready to get back to watching my crew get into their Fall Sports. As crazy as it is with school and practices, it's so fun to watch them do what they love!

Something New for Your Family Table Greek Chicken Meatball Bowls

 Happy Monday, friends! I don’t think I’m comfortable with it being the last few days of July. I feel like in August the nights already begin to get a little bit cooler, my kids start high school sports in a couple of weeks and well I’m just not ready for all of that!!! I could use a little bit more summer!

But back to the business at hand! Sharing a recipe today for Greek Chicken Meatballs. These are pretty versatile, as you could probably do multiple variations to serve them. Put them over a salad or make a sandwich out of them, serve with some zucchini noodles, those are just a few of my thoughts.  We made some simple Greek bowls with brown rice.



Fresh dill is really a non-negotiable here. Dried dill will work, but the fresh herbs really elevate the flavors in a recipe! My favorite scoop for making meatballs the same size. 


I kept them on the slightly smaller size so they were more bite-sized and they baked pretty quickly.

I loosely followed this recipe here.  The recipe has the meatballs cook on the stovetop, but I opted to bake them.  I baked them at 375 for about 18-20 minutes. Time will vary based on how large you make the meatballs. They would also be great in the air fryer!


I kind of made up my own recipe for a Tzatziki sauce. I threw in some Greek yogurt, chopped cucumber, some dill, fresh lemon, garlic, and seasoned it with salt and pepper. I kept adding a little bit of things until I felt like it was the right taste. My local grocery stores sells one premade, but you can make your own pretty simply too. Here is a more formal recipe to make it at home. 


Another reason why I love bowl type dinners. Everybody can just add what they want. I put a bunch of things that seem to go with a Greek or Mediterranean theme. They were cucumber Tomatoes, red onion, Chickpeas, banana, peppers, olives, and feta


Added some brown rice and dinner was done!

Friday Favorites July 26th

   Happy Friday friends! We were fresh off of vacation this week and back into all the things with work and golf and basketball and Ella's job and somehow it’s already Friday! I am ready for a weekend. But before I kick off the weekend, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week.

I had big plans to share all the details from our vacation this week, but unfortunately that just didn’t happen. I had one of our company vice presidents in town traveling with me this week and didn’t have much time for anything else! 
Here’s a sneak peek of us at one of my most favorite places in the world. The Sagamore Resort at Lake George.

Sitting on our patio this week and looking at my pots made me happy. I’ve shared here before that I don’t have a green thumb. But this pot with these purple flowers I am pretty darn proud of!! A favorite this week for sure!

While we did some working out on vacation - walking & paddle boarding, I can’t explain how much I love my routine of working out! It’s a favorite when I get to do it with my girl!

And on this day, she drove herself! She passed her road test the day before vacation, so she has a new found independence!

This is my favorite breakfast and I have shared it here before. I mix one cup of plain Greek yogurt with half a scoop of the best vanilla protein powder, a dash of cinnamon, and about a tablespoon of powdered peanut butter. I typically top it with berries and granola. This week we had plums and I sliced up two plums and added it to my yogurt, and it was delicious! Unexpected but delicious!

This is my second Abby Jimenez book. I read Part of Your World last month. I liked it, but didn’t love it. This one I am loving! Hoping to wrap it up this weekend! I also loved that my pants and my nails matched my book.

Sunday night Luke, Paul and I snuck out to celebrate National Ice Cream Day. There is the best little ice cream shop in the town over from us. I guess I would say it’s more of a gourmet ice cream shop. They have a small amount of house made flavors. This Bada Bing Bourbon is my favorite. And their waffle cones are to die for! The whole shop smells amazing, as they hand roll the cones right there!

I went for a walk with my girlfriend the other night, which is always a favorite. And these here are my favorite shorts to wear for walking or running around. Another favorites for the Summer has been this white blazer. I have done it with jeans, a dress, little leather shorts for a date night, lots of ways to style it.  I paired it with black jeans for work and I loved the black-and-white look. The blazer is currently 50% off - perfect time to grab it!


This weekend, I am finally catching up on all of the house stuff. I think there’s more laundry and clothes on the floor of my bedroom than there is in the closet, so I have to tackle that!

Something New for Your Family Table Sesame Ginger Steak Skewers

 Happy Monday, friends! I took last week off from blogging. We were at the lake all week. It was a week filled with some mishaps and adventures, but a beautiful week of weather and a great time with my crew.

I’m back today with a pretty easy recipe for your Monday. I tried these Steak Skewers from Half Baked Harvest and they were so good. 


I followed the recipe as written, except I sliced the steak into cubes and marinated it overnight. 


I find that flank steak can be tough if it’s not marinated long enough. So after an overnight in the marinade, these were super tender.


We put ours over Jasmine rice, and I sautéed some bok choy to go along with it. The peanut sauce was so tasty. Don’t skip that sauce!! It really made the dish!
