Something New for Your Family Table Turkey Quinoa Bowls

Hi friends! I’m not sure where this last week went, but it totally got away from me and I have not been in this blogging space all week! I usually share something new for your family table on Mondays, but that didn’t happen so it’s coming to you on a Thursday. 

This is kind of one of those recipes that isn’t necessarily a fancy or formal recipe. It’s kind of a couple things thrown together to make a pretty good meal.
One of my girlfriends shared it with me and I kind of just took the concept of it and created our own version. 

You cook some ground turkey, season it with salt, pepper, and garlic powder, cook some quinoa and roast some veggies. You assemble the bowls together and drizzle it all with a lemon vinaigrette and it’s just a super simple dinner that is full of flavor.

You can roast whatever vegetables you want. I did broccoli, sweet potato sticks and cauliflower and then added some beets.

You can roast or grill corn on the cob and then take it off the cob to add it, or you can do zucchini or carrots, whatever you have on hand. 


I roast my vegetables at 425 for around 25 minutes, depending on the thickness of them. I’ll toss them with olive oil and salt and pepper before I put them in the oven.

While those were cooking, I cooked thee quinoa according to the directions on the package. I browned about a pound and a half of turkey and seasoned it pretty simply with salt, pepper and garlic powder.


The last 10 or 12 minutes of the vegetables cooking, I added some already cooked beets. 


I made a pretty simple lemon vinaigrette to drizzle on top. 

Then everybody assembled their bowls with quinoa, turkey, vegetables, goat cheese, and a drizzle of the vinaigrette!


Simple dinner with great flavors and two thumbs up from the family!

Friday Favorites June 14th

  Happy Friday friends! I am so ready for the weekend!!! As always, I am linking up with Andrea & Erika for a little Friday Favorites. A peek into a few of my favorite things from the week.

One of my favorite things, is watching my kids do some of their favorite things. Luke wrapped up his travel volleyball season this weekend. He really has grown so much as a player. He’s found his niche in playing a specialized position, the Libero.




We were able to have all the grandparents there to help cheer him on! Volleyball tournaments can be a little wild. There are balls flying everywhere and whistles blowing across all the courts.

Ella started her first job last weekend. She is working at the cutest little Summer spot.




Paul and I stopped by on her second night to visit her!

Summer vacation for my crew is always a favorite! They have a couple exams left next week, but other than that I will officially have a senior and a sophomore and high school next year!!  Bring on a more relaxed Summer schedule!


I was thrilled to make my last lunches on Tuesday. While it only takes five minutes or so each morning, I feel like I get hours back in my day if I don’t have to make two lunches!! LOL


I snapped this picture of Luke. He was wrapped up with school, and came home to relax on the couch and review the school yearbook with a bag of snacks.

This was my volleyball look the other day. I got this crossbody from Target and I love it! It’s quilted and has a front zipper. I wore it walking around Pittsburgh and it’s perfect for Summer.
It took me a while to catch onto the Stanley craze. While I do not have a collection of them, I have one that my girlfriend sent me and I  really have grown to love it! I may need a brightly colored one for Summer!



I have seen the midi satin skirts around, and I think it’s such a cute trend. I paired it with a sleeveless sweater for work this week.


I think it would also be cute with a tee and a jean jacket.


Ella has a pink one that looked adorable when she wore it for a school awards ceremony.


I did a restock on our favorite face sunscreen! This one is the best. I love the glow tint to give a little coverage and shimmer while protecting my skin! I also got the glow stick for a quick and easy application.  If you have not tried this brand, I highly recommend you grab this little kit. It gives you three of the best products!

On Monday, I shared a super simple summer marinade. We have used it to make all kinds of dishes. I used it again this week to marinate shrimp and it was amazing. You can grab the recipe here. 


I grilled a few ears of corn, cut it off the cob and tossed it with pasta and this new to me sauce from Trader Joe’s. Added the grilled shrimp and some fresh basil and dinner was so simple & delicious. I think this sauce is only seasonal, so I’m going to have to stop by to grab a few more jars!



Well, I had to turn the heat on in the house earlier this week, but this weekend and the week ahead finally looks like Summer! Temperatures in the mid 80s and 90. That is my favorite weather!  Excited to finally get some boat time this weekend, and then spend time with our dads with a little  BBQ at our house to celebrate Father's Day,

Something New for Your Family Table- A Simple Summer Marinade

 Happy Monday friends! We had a fun and full weekend. Luke wrapped up his travel volleyball season with a 2 day tournament and Ella started her first job! We have 2 more days of school and then a few exam days standing between us and Summer vacation! We are ready for a more relaxed schedule for a few months. 

Sharing a pretty simple meal idea today. I have been working on making my own dressings, marinades and sauces as opposed to buying them pre-made. Some of the ingredients and oils in the sauces can be on the unhealthier side and in most cases it's less expensive to make your own. 

My latest go to has been a Greek marinade for Chicken. I have used it 3 different ways over the past few weeks. I put all the ingredients into a gallon baggie, add the chicken and mix it around. I will do that in the morning, throw it in the fridge and it's ready to cook when we get home from work. 


Here is what you will need. 

1/4 cup of Olive Oil

3-4 cloves of garlic, minced

Juice of one lemon

2 TSP of oregano

1 TSP Dijon Mustard

1 TSP salt

1/2 TSP pepper

This is enough marinade for up to 1.5 pounds of chicken. 

One day we grilled it, and added a slice of fresh mozzarella at the end. We topped a nice green salad and added some fresh basil and balsamic. 


Another day we built some Greek bowls with lettuce, cucumbers, rice, red onion, tomatoes, olives, hummus and feta. So, so good!


I also marinated the chicken breasts and then cut up into bite size chunks and added to skewers. I like to build the meat and veggies separately, as the cooking times are not always the same for each. We put the chicken and vegetables over rice for a quick and fresh Summer meal. 


This simple marinade is so good on chicken, but would also be great on shrimp or scallops. 
I hope you give this one a try- it is so much better than a store bought marinade and you can use it in so many ways!

Friday Favorites June 7th


  Happy Friday friends! I hope you had a great first week of June! It was a busy one here at work and the kids are wrapping up their last full week of school today. Bring on Summer Vacation! Last weekend we had the best time! We saw two of our favorites in concert, and enjoyed some much needed time away. I shared all the fun from our weekend in Pittsburgh on the blog. You can read about it here

So I have shared before that I have made a conscious effort this year to include some different vitamins and supplements as I try to live my healthiest life. My journey with plant based wellness has been such an integral part of how great I feel this year.  I shared more about it in this post.



  I got my delivery this week and it is for sure a favorite.  Using it  consistently has helped me so much in this season of life.  I have truly never felt better. My next favorite in feeling great everyday is electrolytes. I think we all know that hydration is pretty important. And I have noticed a pretty big difference in drinking this consistently for the past six months. I drink it first thing in the morning, and it has me feeling awake and energized throughout the day.
I love the watermelon and the  variety pack.

On Monday, I shared the details on this amazing salmon recipe! I think it’s a perfect summer recipe to use up all the zucchini that grows in Summer! You can see all the details here

We got our first batch of cherries last weekend and gosh they tasted as good as they looked!!!! This pretty bowl did not last long in our house!


Summer grilling is a favorite and this is such a simple way to grill asparagus. I make a little "pan" out of heavy duty foil and add asparagus in a single layer. I drizzle with olive oil and season pretty simply with salt, pepper and garlic powder. I place the "foil pan" right on the grill and they cook in about 10 minutes. I add a few lemon slices the last few minutes. So simple, but delicious and an easy clean up!

Luke is not always up for shopping, but I got the chance for a little time with him this week to get some new golf gear. He has become a bit golf obsessed and is always looking to get out on the course. He had a few gift cards from this birthday so we upgraded his bag and he got some new golf shoes. 


He closes out the volleyball season this weekend, with their last tournament. Looking forward to seeing some good volleyball from my libero this weekend!

We also have Ella starting her first job tonight! She is working at a great local Summer spot and she is so excited to get started!

Summer Kickoff - Kenny Chesney in Pittsburgh


 Hey friends! Hope you are off to great first week of June. We are officially in my favorite season. I love the months of June, July & August. The weather, the easier schedule with the kids, the longer days, the food,  just all of it. 

Another favorite part of this time of year is Summer concert season. We kicked off our first concert of the year in April, and the weather was not exactly what I had hoped for. We were in winter coats and hats to see Luke Combs. We still had an awesome time, but it was an outdoor show and about 38°.



So I was really pumped to see temperatures in the 80s for our next concert. We went with some friends to Pittsburgh to see Kenny Chesney. He was in concert along with Zac Brown Band, Megan Moroney, and Uncle Kracker. We saw Kenny in Pittsburgh two years ago and had so much fun, that when we saw he was coming back again. we knew we had to get tickets.

We headed down Friday afternoon. Once we checked into our hotel, we walked over to a great taco spot to grab lunch. I could eat Mexican inspired food every day of my life. 




I guess there’s multiple locations of this restaurant, called the Bakersfield. They had great cocktails, and even better loaded queso! If you stumble upon one, I highly recommend it!

After lunch, we headed back to the hotel and took the most glorious middle of the day Friday afternoon nap!

We grabbed a late bite for dinner at a restaurant right across the street, where we could eat outside. There's another reason,I love these Summer months.....eating outside just makes everything better! 




Saturday morning we slept in, grabbed coffee and headed out on a walk to see how far the stadium was from our hotel. I was up earlier than Paul so I hung out in the lobby for a bit and almost finished my book. 


Off to explore! There were a lot of events happening Pittsburgh on Saturday and they were saying traffic and parking could be a little tricky. Our server on Friday told us it was a pretty easy walk. We headed across the bridge and what a sight! There were a ton of boats docked along the river in preparation for the concert. Such a fun vibe!



Our friends got in around lunchtime. And since we loved our time at the Bakersfield so much, we took them back for lunch on Saturday. We did an assortment of different tacos and they did not disappoint! 


After lunch, we made our way back across the bridge to the concert. There are a couple of bars right outside the stadium so we stopped at Jason Aldean‘s, and then onto Tequila Cowboy. Lots of people, live music and great patios. It kind of felt like Nashville!



The show was so amazing! There were four acts, and it started at 5 PM and I think wrapped up around 11.





Walked over 23,000 steps! My feet were doing well until the last 10th of a mile, when I could feel a blister on my left pinky toe. But I was pretty impressed that I made it 12+ hours in my cowboy boots.


We took Sunday morning slow, stopped by a local shop to grab coffee and breakfast and made our way back home.



It was a fun weekend and I will share some of my life advice… Always buy the concert tickets! I have never once said I wish I didn’t go to the concert.
