Something New for Your Family Table Chicken Zucchini Caprese Skillet

 Happy Monday, friends! We had a beautiful Mother’s Day, that took a bit of a bit of a wild turn, but I’ll share more on that later in the week.


Sharing a recipe I found that is pretty simply come together. It’s a one pan dish and got two thumbs up from my family.  I feel like zucchini can be an underrated vegetable. I don’t think of using it very often, unless it’s super abundant like in the Summer. I have been using it more often as a vegetable side and it has quickly become one of Ella’s favorites.  I think it adds some nice substance to a dish like this. 


Aside from the chopping of the chicken and the veggies, it’s not a super labor intense meal. I think it could definitely work for a weeknight. 




The fresh basil and the balsamic give it some really fresh flavor. 



The recipe suggests serving it rice or couscous. We paired ours with roasted  
spaghetti squash.
