Something New for Your Family Table Tex Mex Fish


Happy Monday friends! Excited to share a new recipe with you today. While we were in Florida last month, Paul had a Tex Mex inspired fish dish that he loved. He casually mentioned that I could probably recreate at home! I do love a good challenge in the kitchen, so I looked at the menu description and got to work. Simple, fresh ingredients with great flavor- it was a winner!



Here is what you will need.

Fish Seasoning

1 TSP Paprika

1 TSP Garlic Powder

1/2 TSP Oregano

1 TSP Cumin

1 TSP Salt

Olive Oil 

4 fish fillets of choice- cod, halibut, snapper or other white fish


For Tex Mex Topping

2 TBSP Olive Oil

5 Roma Tomatoes chopped

4 cloves minced garlic

3 stalks green onion chopped 

2 cups canned black beans, rinsed and drained

1 TSP cumin

1/4 cup chopped cilantro

Juice of 1 lime

Salt & Pepper to taste


For the Tex Mex topping

Heat saute pan over medium heat and add olive oil. 

Add tomatoes, garlic, onion and saute 3-5 minutes. 

Add black beans and cumin and cook for 5 minutes

Drizzle with lime juice and add cilantro. Season with salt & pepper to taste. Mix to combine and remove from heat.


For the Fish

Mix Seasoning together. Brush fish with olive oil and sprinkle with seasoning. 

Air Fry at 375 for 8-10 minutes pending on thickness of fish. You could also bake at 400 for 12-15 minutes, pending thickness.


We served ours with brown rice, fish, about 1/2 cup of topping and fresh avocado. It was a delicious new twist for fish! I think you could do this same recipe with shrimp and it would be delicious!
