Five Meals for Your Family Table....Week 48

It's Monday.
Here are five simple meals to get dinner on the table this week.
One less thing to think about today😊.

We have been a on a big citrus kick over here and am trying to add a bit to our meals. This Salmon with Citrus Quinoa is made with some simple ingredients and is delicious!  Salmon is one our favorites, but you can easily switch this out with another fish if your family is not a fan of salmon. Fish cooks very quickly, which is why it is one of my go-to's on a weeknight.

Instead of Taco Tuesday, we are going with Enchilada Tuesday.
These Verde Chicken Enchiladas are so good and come together quick with the help of a rotisserie chicken & your favorite salsa verde. You can grab the recipe here.

Now you may think Maple is reserved for sweet dishes, but it works in savory ones too. This Maple Glazed Chicken is simple and tastes so good. For the glaze, whisk together 1/4 cup  EVOO, 1/4 cup pure maple syrup, 1 TBSP whole grain mustard and the zest & juice of half an orange. (See I am bringing that citrus in again😉). Brush it on one pound of boneless chicken breasts and bake at 400 for 20-25 minutes, or until the chicken is cooked through. I have it here with some maple glazed squash, but you can do pair it with any vegetable you want!

Let's talk "cook once, eat twice". I love to cook some extra of a dish one night so I can use it again in a different way the next night. So tonight we will make some pulled pork in the crockpot. #thankyoucrockpot
And tomorrow we will use the leftovers for a fun Friday night dish!
Thinly slice a large onion and lay it in the Crockpot. Place 3-4 pounds of pork shoulder on top and sprinkle with salt & pepper. In a bowl, mix 3 TBSP brown sugar, 2 TBSP Worcestershire sauce, 3 TBSP yellow mustard, 2 cloves of chopped garlic, 1/2 cup vinegar, 1 cup chicken stock and pour over the pork. Cook on low for 6-8 hours. Take out the pork, shred it, and dump the liquid, reserving 1 cup. Put the pork back into the Crockpot with 1/2 cup of your favorite BBQ sauce and some of the reserved liquid. Cook on low for another 30 minutes.

So I usually like to make a fun, easy dinner on Friday nights. Pizza bars, burgers, breakfast for dinner....nothing too complicated at the end of the week. Tonight, use the leftover pulled pork to make some pulled pork nachos for dinner. 
Line a large baking sheet with foil and lay out some chips...enough to cover the pan. Then top with some of the pork, black olives, chopped red onion, banana peppers (I put on half),a drizzle of BBQ, and some shredded monterey jack cheese (about 1 cup). Bake at 400 for 8-10 minutes.
When they were done, I added some fresh cilantro, avocado and a little plain greek yogurt.
Put the pan in the middle of the table and dig in! A fun Friday night dinner.
