Five Meals for Your Family Table.....Week 50

Merry Monday friends!!! Can you believe...we are  just one week away?

I am so excited, yet don't want this season to end! And this week is a week of lists for me...wrapping up some last minute details and lots of holiday fun this week.
The last thing I have time for is thinking about dinner, so I am happy to have a plan for that. #crossthatoffmylist

This Roasted Vegetable Tortellini never gets old. And bonus... it comes together in  no time. Take 4-5 cups of your favorite veggies. You can use almost anything!  A few of  our favs are zucchini, onion, broccoli, peppers, carrots, cauliflower, mushrooms, and asparagus. Chop into bite size pieces and toss with EVOO and sprinkle with salt & pepper. Roast at 425 for 20 minutes or place in a grill basket and grill for 15 minutes. Toss with some tortellini or your favorite pasta.  A sprinkle of cheese... feta, parm or goat are our favorites and dinner is done.

Today you can cook once and eat twice! These Turkey Stuffed Peppers can be made a day or two ahead of time and are a perfect winter dinner. In this recipe, you will brown double the ground turkey you need and save half for tomorrow's Taco Salads. Follow the recipe for the stuffed peppers, except during your first step, double the meat, using 2lbs. Once the meat is browned (and before you season it), transfer half to a separate dish and sprinkle with 2 TBSP of taco seasoning and 1/4 cup of water. Allow to cool and store in fridge for meal two.

These Taco Salads are simple, easy and a kid favorite. You just have to set up a taco bar with lots of great toppings, your meat is all prepped from the night before! I like to warm it up before topping my salad. Some of our favorite toppings are tomatoes, black olives, black beans. avocado, chopped cilantro, crumbled tortilla chips, salsa, shredded cheese and Greek yogurt. There is usually so much flavor with all of that, there is no need for a dressing. If you need a dressing, you can mix up some plain Greek yogurt with salsa and it makes a creamy topping for your salad!
If you are working with your kiddos to eat salads.. maybe it's not their thing yet... make it a taco bowl. Add some crunchy chips, let them pile on some veggies and go from there. No need to make a separate meal, just use pieces of this one to make it work!

This is a perfect mid week meal...on the table in less than 30 minutes & easy clean up! My Italian Sausage sheet pan supper is kind of like a deconstructed Italian hoagie and is a winner at our family table.

I need easy to end this week and start the long holiday weekend.  One of my favorite go to easy meals is a make your own pizza and salad bar.  Grab some whole wheat or whole grain naan or flatbreads for your crust. Lay out lots of topping options and bake at 425 for about 5-7 minutes. While the pizzas are cooking, build your salads. Be sure to put out veggies in lots of great colors! I really like Mid's pizza sauce & shred my own mozzarella from a block. It melts so much better and doesn't have the caking agent that the pre- shredded cheese has.  My kids love to build their own dinners!
