I hope you all had a beautiful Easter weekend with your families! And I am not sure about you, but I sure stuffed myself at Easter Brunch! And the last thing I wanted to think about was more food! Lucky for me...and you....this week's meal plan was already done! No thinking required. So grab your pen and jot down your shopping list!

We always have ham leftover after Easter and Christmas and this meal is a sure thing the day after in our house. Pasta with Peas and Ham is so simple and the perfect way to use up the rest of the ham.

After cooking and eating my way though Easter, tonight is is a "cook once, eat twice" dinner! We are making Turkey Stuffed Peppers for dinner tonight. I will brown extra turkey and season it with some taco seasoning to use in taco salads tomorrow night!

Yay! It's a no cook night....if you did the peppers last night, Taco Salad is on the menu tonight. Salad bars are an easy dinner fix. Lay out lots of veggies and top with the taco meat you prepped last night. Dinner is done quick and everyone is happy to build their own.

These BBQ Chicken Mini Meatloaves are a new favorite in our house. A few simple ingredients and they bake in less than 30 minutes! Add some rice or a potato and of course something green!

I made this a few weeks ago and it was delicious! This Cod Piccata had just the right amount of flavor with the capers and some fresh lemon juice. My kids are not huge fans of capers, so they opted for the fish without the caper sauce.
A few tips to prep to make dinner even easier....
Cut and prep the peppers for the stuffed peppers.
Cut and prep veggies for your taco salad night
You can make the mini meatloaves a few days ahead and bake them the night you are serving if you need to save time.
