Five Meals for Your Family Table.... Week 13

It's Monday.....another week... and I guess we need to feed the family again! Stumped at what to get on the table this week?  We have got you covered with something from the grill, an easy soup, and little taste of the tropics!

The weather is warming up and I am all about the grill! Keep it simple for your Monday with some burgers on the grill. Beef burgers, turkey burgers, veggie burgers, or salmon burgers.... it's up to you! I like to wrap mine up in lettuce as opposed to a bun. Add some fresh cut veggies with a dip/hummus or maybe some sweet potato or carrot fries and dinner is served!

Sometimes I get "tacoed-out" for Taco Tuesday, but I could still eat Mexican food everyday. This Chicken Fajita Soup has all the tastes I am looking for and comes together in no time. Click here for the recipe.

Pork Tenderloin with baked potato. I like to keep the tenderloin simple with some EVOO, salt, pepper and maybe a little dijon mustard. Serve with a classic baked potato and something green.... dinner is done!

This dish is another simple, fresh meal for a busy weeknight. Chop up your ingredients on prep day and this will be on the table in no time! 
Have you ever had the lettuce wraps at PF Changs? Those were my inspiration for this recipe and the kids love them! I chop up Napa cabbage, peppers, onion, and carrots on prep day and then dump the bag in a wok and it cooks up really quick! I grab a rotisserie chicken and add that in. I add in some liquid aminos or Wegmans Organic Teryaki sauce and then fill up the lettuce cups... so good!

A little taste of the tropics for your Friday with this Coconut Shrimp with Raspberry dipping sauce. This coconut shrimp has the perfect taste of sweet! The shrimp cooks in just 10 minutes and it's delicious with some pineapple rice. You can grab the recipe here.
