Five Meals for Your Family Table.... Week 14

We are covering all the bases this week, with steak, fish, a salad, chicken and a little breakfast for dinner! Refill that coffee.. grab your pen and jot down your list, we have got this week's meal plan covered!

Steak with peppers & mushrooms. We don't eat steak a lot, but it's nice to have every once in while. I keep the seasoning simple.. EVOO, salt & pepper. Sprinkle that on your steaks and then layer some baby bell peppers and mushrooms in a grill basket and sprinkle them too. Put everything on the grill and let the grill do it's thing! Toss the veggies every now and then to be sure they don't burn. I load up my veggies and top the steak with some goat cheese. The kids like to slice up the meat and the veggies and toss over some brown rice to make a "steak bowl".

Take a different twist on your Taco Tuesday and build them with some fish. You can use any fish you like... cod, mahi, or tilapia. Sprinkle with a little EVOO, salt, pepper and fresh lime juice. Bake at 425 for about 8-12 minutes, depending on the thickness of the fish. You can grab the recipe for our favorite cilantro lime rice here. Set up your taco bar and dinner is served!

Salads make their way to our meal plan pretty much weekly, as the weather warms up.  Sokeep dinner simple with a salad bar. I like to mix some baby spinach with romaine as the base and then let everyone add on the extra veggies they want. Top it with any protein you want... chicken, salmon, steak, or a veggie burger. Dinner is healthy, simple and "build your own"....another family favorite here!

Thursdays are always a busier night for us, and these Mediterranean Chicken Pitas are just the right thing! They come together quickly and they are perfect to grab on the run if you're in a pinch. You can grab the recipe here.

My crew is always a fan of breakfast for dinner and a fan of pizza, so why not put them together? Breakfast pizzas for the win on a Friday night. These can really be customized however you want. Just scramble 7 eggs and then add your "fixings" to the eggs. We love ham, spinach and broccoli. You can use sausage or bacon (both cooked), tomatoes, mushrooms.... whatever! Top some flatbreads with the egg mixture and sprinkle with a little cheese. Bake at 425 for about 5 minutes to just melt the cheese. Easy, yummy, breakfast for dinner!
