Something New for Your Family Table Week #20...Cod Tacos with Lime Slaw

Hey friends!! You know I could eat some form of taco everyday and be totally ok with it!! So I am so excited to share my recipe for these cod tacos. 
So many fresh tastes and a favorite in my house! This recipe serves 4-6 and you can either grill the cod or cook on the stove top.
Here is what you will need.

Ingredients
For Cod
3-4 pieces of fresh cod (about 1 1/2 lbs)
1 TSP Cumin
1/2 TSP Salt
1/2 TSP pepper
1 TSP Oregano
1 TSP paprika
1 TSP Garlic Powder
EVOO

For the Slaw
3 cups of shredded red cabbage
1 can of black beans, rinsed and drained
3-4 TBSP of EVOO
1 1ime
handful of  chopped cilantro

For the Sauce
1/2 avocado
1/2 cup plain Greek Yogurt
handful of cilantro
juice of 1/2 lime
salt & pepper

Extras
Torillas
Cheese (optional)
Red onion
Avocado 
Salsa

Prepare the slaw first (it can be made a day ahead). Mix the cabbage, beans, olive oil and cilantro together. Add lime juice, salt & pepper to your liking.

For the fish, mix the 6 spices together. Rinse and pat dry the cod and sprinkle both sides with the seasoning mixture. You can cook these either on your stove top or can grill them. If you choose the stovetop, heat a few tablespoons of EVOO in a fry pan until hot and add the fish. Cook for about 4 minutes per side, depending on thickness of the fish. To grill, brush the grates with a little olive oil and grill over medium heat for the same time as stove top.

While the fish is cooking, you can make the sauce. Put the avocado, yogurt, cilantro and lime juice in the food processor and blend until smooth. Add salt and pepper to taste. If the sauce seems to thick, just add a bit of water to thin it out. 

Layer your tortilla with the slaw mixture, some cod pices, a drizzle of sauce and any other toppings you want! Our favorite side dish on taco night is just a big bowl of veggies and olives. It's so easy and a great way to get in more vegetables!
These are some of our favorite tacos! I feel like I am on vacation somewhere warm when we eat these!

If you are looking for a way to make these lighter or you want to reduce your carbs at dinner, you can just make a bed of the slaw & lettuce and add you fish and toppings! It's so good that way too!
