Something New for Your Family Table Week #18....Clambake!!

Hi friends! We are coming off a great long weekend, one that was filled with all things Summer! We made one of our favorite Summer dinners and I wanted to share it here with you.
We love steamed clams and I found a way to make them that is pretty easy and cooks the whole meal together. 


Here is what you will need to make this dinner. This serves our family of 4.
Ingredients
4 dozen little neck clams
3-4 ears of corn (shucked)
1 lb of your favorite cooked sausage (polish, summer, andouille)
1 lb baby red potatoes
1 bottle of light beer
salt & pepper
butter for serving

There are two steps to take before assembling your packets. One is to soak and rinse the clams to remove any sand/dirt. Rinse with cold water and make sure to toss any clams that are already open or cracked.
The second step is to boil the potatoes for about 10 minutes so that they just start to soften.
While the potatoes are cooking, slice the sausage into small pieces and break the corn into halves or thirds.
Now to assemble your packets. Make a cross with heavyduty foil like the picture below. Each foil piece should be about 18-24" long. Also make sure you use the heavy duty foil, as the other kind can rip easily.
Layer the ingredients in the center of the packet. 12 clams, and 1/4 each of the potatoes, corn and sausage. You will be making 4 packets. Fold the sides up a bit to make a "bowl" and pour in a quarter of the beer and give a generous sprinkle of salt and pepper. 
Fold the packets up to seal and place on the grill. Heat them on medium-high heat for about 20 minutes.
Carefully take a look inside (wearing oven mitts) and you should see the clams opened up.  That's when you know they are done.

You can just dump the packets into a large dish to serve.
We like to serve with watermelon, melted butter and hotsauce.
