Five Meals for Your Family Table....Week 39

Oh hey there October! I am ready for all sorts of soups and cozy dinners this week.
Refill that coffee, grab your pen and paper....we have your meals planned out for this week.

My Black Bean Soup is on repeat in our house during the fall and winter. It is the perfect fit for Meatless Monday. You can grab the recipe here. We like to pair ours with some chicken & cheese quesadillas.

Instead of Taco Tuesday, we are going with Enchilada Tuesday.
These Verde Chicken Enchiladas are so good and come together quick with the help of a rotisserie chicken & your favorite salsa verde. You can grab the recipe here.

I love the taste of Maple in the fall. It's usually reserved for sweet dishes, but it works in savory ones too. This Maple Glazed Chicken is simple and tastes so good. For the glaze, whisk together 1/4 cup  EVOO, 1/4 cup pure maple syrup, 1 TBSP whole grain mustard and the zest & juice of half an orange. Brush it on one pound of boneless chicken breasts and bake at 400 for 20-25 minutes, or until the chicken is cooked through. I have it here with some maple glazed squash, but you can do pair it with any vegetable you want!

Asian Chicken Lettuce Wraps.
Sautee some veggies, add a little rotisserie chicken and you can get dinner on the table in no time. Perfect for a busy weeknight if you prep some of this beforehand. On your prep day, chop one head of Napa cabbage, thinly slice 1 red bell pepper and dice 3 medium carrots and one small onion. Put your carrots and onion together and put the cabbage and pepper in a large bag. On the night you are having this, heat 3 TBSP coconut oil in a large pan and add your carrots & onions, cooking over med-high heat until softened. Dump in your cabbage & peppers, cover and cook until softened. Add in some shredded rotisserie chicken and a few shakes of liquid aminos (or soy sauce) and toss. Then fill large romaine leaves with the mixture.

Even though the calendar may say Fall, I am still in Friday night burger mode! All the tastes of tacos, but in burger form! Mix 1 1/2lbs of ground turkey with 2 TBSP of taco seasoning and form into 6 patties. Grill for 15 minutes. Now for the fun part! We topped ours with all the regular taco fixings... lettuce, tomato, salsa, avocado, black bean spread, shredded cheese.
So, so good! And so easy to just put on top of a salad and skip the bun!
