Five Meals for Your Family Table.....Week 27

Happy Monday friends! It's our first day back after a great vacation. I shared some highlights from vacation in our Friday Favorites post. 
We have got a week of simple suppers as we adjust back into working all week! Here are some dinner ideas for your family table.

Fish tacos are a favorite Summer meal. Easy to put together and everyone can top how they want...it's a winner in our house. Simply season your favorite white fish (cod, halibut, tilapia) with a little olive oil, salt and pepper and grill until flaky. Set up your favorite taco bar toppings and there you have it. A fresh, simple supper!

We made these Hawaiian Chicken Kabobs a few weeks ago and they were just so good. Something about grilled pineapple....
Pineapple, chicken, BBQ and veggies come together to make these kabobs so full of flavor!
Cut 1lb boneless chicken, 3 bell peppers, half a pineapple and a red onion into some larger bite size chunks. Thread them in alternating flavors on a skewer (this made about 8 kabobs). Brush the chicken with some of your favorite BBQ sauce and grill for 15-20 minutes, turning often (until chicken cooked through).

I have mentioned before that we don't eat a lot of pasta. I like to sub in veggies for the pasta in a lot of recipes. These Cauliflower & Sausage Bowls are hearty like a pasta dish, but without all those carbs. Chop a head of cauliflower, drizzle with some EVOO, salt & pepper and roast at 425 for about 20-25 minutes. While the cauliflower is roasting, you can grill the rest of the dinner. I used some chicken sausage, corn and asparagus and put it all on the grill. Layer the cauliflower on the bottom and top with sausage and veggies.

Sometimes I just want simple in the Summer. And for me that's grilled chicken, baby red potatoes and something green. Simple, easy and delicious.

And at the end of the week.... BLTA's are always a good idea. Some fresh sourdough bread, crispy bacon, summer tomatoes, lettuce and a little avocado make a darn good dinner!
