Five Meals for Your Family Table.... Week 22

Oh hey friends! Another Monday.... and gosh I know today is going to be tough. 
We were busy all weekend and my crew (including me) is going to be toast at the end of today.
Lucky I have got this week's meals planned and prepped.
A couple favorites, a new burger and some amazing kabobs!

This Roasted Vegetable Tortellini never gets old. In fact in the Summer it gets even better with all the great summer veggies and you can grill instead of roast. Another bonus... it comes together in  no time. Take 4-5 cups of your favorite veggies. You can use almost anything!  A few of  our favs are zucchini, onion, broccoli, peppers, carrots, cauliflower, mushrooms, and asparagus. Chop into bite size pieces and toss with EVOO and sprinkle with salt & pepper. Roast at 425 for 20 minutes or place in a grill basket and grill for 15 minutes. Toss with some tortellini or your favorite pasta.  A sprinkle of cheese... feta, parm or goat are our favorites and dinner is done.

Pineapple, chicken, BBQ and veggies come together to make these kabobs so full of flavor!
Cut 1lb boneless chicken, 3 bell peppers, half a pineapple and a red onion into some larger bite size chunks. Thread them in alternating flavors on a skewer (this made about 8 kabobs). Brush the chicken with some of your favorite BBQ sauce and grill for 15-20 minutes, turning often (until chicken cooked through). These are so yummy... the sweetness from the pineapple is just perfect with this!
P.S. Grill some extra BBQ chicken for Thursday's dinner😉

This Grilled Halibut topped with bruschetta looks fancy and complicated, but its really anything but! Our local grocery store has an olive bar, so I just grabbed some fresh bruschetta there. Drizzle the halibut fillets with a little EVOO, sprinkle with salt & pepper and grill for 10-12 minutes. Top with the bruschetta once they come off the grill. We paired ours with some cauliflower rice and sauteed spinach. An easy way to fancy up your Wednesday!

BBQ Chicken Salad is hands down our favorite Summer salad. And if you grilled extra chicken with your kabobs it will be a cinch to get dinner on the table! Grill some chicken (or use a rotisserie chicken) and then build your salad. Some of our favorite topping are black olives, bell peppers, corn and tortilla strips. Instead of dressing, we just drizzle a little bit of BBQ sauce over top. You can also mix some BBQ with plain greek yogurt for a creamier dressing option! The Summer beer is optional😉

Finishing our the week with another fun twist on burgers. These Taco Burgers got two thumbs up from everyone around table! And they are so simple....simple dinner that everyone loves... I'll take it! 
Mix 1 1/2lbs of ground turkey with 2 TBSP of taco seasoning and form into 6 patties. Grill for 15 minutes. Now for the fun part! We topped ours with all the regular taco fixings... lettuce, tomato, salsa, avocado, black bean spread, shredded cheese. Ella said "It tastes just like a taco but it's a burger!"
So, so good! And so easy to just put on top of a salad and skip the bun!
