Five Meals for Your Family Table.... Week 24

We are so pumped to be in the home stretch of this school year... 2 more days!!! To be honest, the most exciting part is two more days of making lunches! Yes... my kids still eat lunch in the Summer, but something about making them for school everyday feels like it takes hours! HA!
Now dinner planning, I don't mind that one bit. So it that's not your thing, we have got you covered with five great Summer meals this week.

We usually don't eat a lot of pasta. Paul is not a huge fan, so I don't make it often but this Lemon Pasta is a winner. The fresh lemon and asparagus is so good and the perfect start to the week

Now I said we don't eat a lot of pasta, so we sub in with Zoodles or any type of veggie noodles. I am a huge fan of zucchini in the Summer and zoodles make it into our dinners on the regular. You can make your own with a spiralizer or a lot of grocery stores sell them already done. Heat up a little olive oil, and saute the noodles for about 10 minutes and season with salt and pepper. They are so good! Add some grilled chicken sausage and a sprinkle of your favorite cheese for a simple dinner.

The first day of Summer calls for clams in this house. Assemble some packets, toss on the grill and dinner is a quick cleanup too! I add about 12 littleneck clams, an ear of corn (cut in half) a few slices of sausage, and some parboiled red potatoes to a sheet of foil. Sprinkle with salt & pepper and add 1/4 cup of beer and close the packet. Sometimes you need to double wrap so they don't leak. I usually make 
4 packets. Heat on a high grill for 15-20 minutes, or until the clams begin to open. The perfect Summer dinner!

Finishing up the week with one of my favorite burgers. The Sundried Tomato turkey burger.  Mix 1lb of ground turkey with 1/4 cup of chopped sundried tomatoes, 1 tsp salt and 1/2 tsp pepper. Form into 4 burgers and grill until cooked through. They are delicious topped with some crumbled feta and spinach!
