Five Meals for Your Family Table.....Week 31

Are you feeling stumped with what to pull together for dinner this week? 
We have got you covered with a great salad, burger, wraps and two more ideas to get dinner on the table this week.

For Meatless Monday we are having these simple crab cakes. I shared my recipe the other day. These get 2 thumbs up from everybody at our family table. Add some grilled corn and it sure feels like what you should be eating mid-Summer!

I love salad for dinner in the Summer. When it's hot, sometimes I just don't feel like a big dinner....and it's a great way to take advantage of  the great Summer produce. So for a twist on Taco Tuesday, make a taco salad tonight. All the components of a taco, just in salad form. Just brown some ground turkey or chicken with a few TBSP of your favorite taco seasoning and add it to some chopped romaine. Pile it with your favorite toppings and dinner is done!

These Cauliflower & Sausage Bowls are hearty like a pasta dish, but without all those carbs. Chop a head of cauliflower, drizzle with some EVOO, salt & pepper and roast at 425 for about 20-25 minutes. While the cauliflower is roasting, you can grill the rest of the dinner. I used some chicken sausage, corn and asparagus and put it all on the grill. Layer the cauliflower on the bottom and top with sausage and veggies.

Buffalo Chicken Wraps are fresh, full of flavor, and bonus.... a set it and forget meal. The chicken cooks in the crockpot all day and you can just assemble your wraps at dinner time! 
 Place a pound of boneless chicken in the crockpot with 2 cups of chicken broth and 1/2 cup of your favorite hot sauce. Cook on low for 6-8 hours. Take the chicken out, shred it and drain the pot (reserve about 1/2 cup of liquid). Return the chicken to the pot and add 1 cup of diced celery, the reserved liquid and more hot sauce if you need more heat. Layer the chicken into some large romaine leaves and sprinkle with bleu cheese.

I tried these burgers from Mix & Match Mama and ohmygoodness they may be the best burgers we ever had! My kiddos love them (sans the gorgonzola) and I did mine bunless on top of a pile of arugala. The flavors were just so good together. You can grab the recipe here.
