Grilled Salmon Tacos

I love tacos! I mean I could probably eat tacos nearly everyday...so I love to switch it up. These salmon tacos get a great flavor kick with a simple sauce.

Ingredients
3-4 Salmon Fillets
EVOO
2 TSP Cumin
2 ears of corn
2 TBSP melted butter
Salt & Pepper
Tortillas
Favorite taco toppings
Shuck the corn and place each piece on a sheet of foil. Brush with butter and sprinkle with salt & pepper. Wrap tightly and grill for 15-20 minutes, turning often.
Drizzle the salmon fillets with EVOO and sprinkle with the cumin and salt & pepper.
Grill for about 10 minutes, until the fish is cooked through.
When the fish is done, put the tortillas on the grill for just a minute to warm & toast.
For the Sauce
1/2 cup plain greek yogurt
1 handful of cilantro leaves
1/2 avocado
juice of 1/2 lime
salt & pepper to taste
Add all the ingredients into the food processor and blend until pureed. Add salt & pepper to taste. You can also add a bit of water to make the sauce a little thinner. 
Take the corn off the cob, be careful, as it will be hot. 
Layer the tortillas with lettuce, the grilled corn, salmon, avocado and the sauce. You can really add any favorite taco toppings. 
I put the sauce in a ziploc bag and snip the end. Then I can just drizzle it across the tacos.
We had ours with grilled pineapple and it was so, so good!
